I want to make my son some cupcakes to freeze so that when someone has a treat/party he has an alternative I can bring him. He's allergic to pretty much everything that goes in a cake. lol So, my question is, I got a chocolate cake mix that he can have but I need to figure out a dairy free frosting. Any ideas?? I got some tofutti ''cream cheese'' that I thought about making him a cream cheese frosting with, but I haven't found a margarine spread that he can have to add the ''butter'' part of the recipe. Help?

My MIL who can't have butter/eggs/milk/gluten uses Earth Balance buttery spread.

He hates the taste of coconut. Does it taste like coconut?

Powdered sugar, dairy free margerine, vanilla extract and almond milk (soy and lactose free) makes a delicious buttercream frosting.
