Was I not suppose to remove the skin?

I already did and its marinating. How do I tell if its cooked long enough? I've never had it before.

I always remove the skin....it's done when it flakes when touched with the tip of a fork. Do not over marinate, it can turn to mush.

It flakes easily with a fork when pulled at, and I've also noticed some fatty parts that turn white when fully cooked. Just slide that stuff off there. I always take the skin off.

I never remove the skin. I always sprinkle it with some olive oil, kosher salt, white ground pepper, and then I bake it for 25 minutes in a 350 degree oven.
