Hi ladies! Just wanted to share a yummy recipe for dinner or lunch. its nutritious, low calorie, and filling!

CHICKEN TACOS WITH CHARRED TOMATOES
INGREDIENTS:
2 plum tomatoes cored
8 ounce boneless skinless chicken breasts, trim the fat (as many as needed )
1/4 tsp. Salt
1/8 tsp. Ground pepper
2 tsp. Canola or olive oil,divided
1/2 cup finely chopped white onion( or 1 cup)
1 clove garlic, minced (half a jumbo clove)
1 small jalapeno, seeded and minced
2 tsp. Lime juice,plus wedges for garnish
2 tsp. Chopped cilantro (or more if desired )
2 scallions chopped
6 small corn tortillas, heated (or more if desired )
DIRECTIONS:
Heat A medium skillet over high heat until very hot. Add tomatoes and cook ok occasinally with tongs. Until charred on all sides. About 8 to 10 minutes. Or even a little less.Transfer to plate too cool slightly. cut the tomatoes in half crosswise and squeeze to discard seeds. Remove the cores and shop the remaining pulp and skin

Cut the chicken into 1 inch chunks and sprinkle with salt and pepper. Add 1 teaspoon oil to the pan and heat over high heat until very hot. Add the chicken and cook, until it is brown and no longer pink in the middle(FYI chicken normally don't turn brown but all white inside and out). Cook 3 to 5 minutes then transfer to a plate.

Reduce heat to medium and add the many teaspoon oil. Add onions and cook stirring until softened about 2 minutes. Add garlic and add jalapenos and cook until fragrant, about 30 seconds. Add lime juice the chicken and tomatoes. Cook stirring until heated through 1 to 2 minutes. Stir in cilantro and scallions. Divide the chicken make sure among 20 is served with lime wedges.

Also if you like avacados you can make some guacamole dip for chips. I put a little garlic salt and peppers, onions.
