And I'm the only person in my house who likes either mayo or creamy dressing.  DH says that making these things is like engaging in "culinary masturbation".  Ass.

1  big egg yolk

2 teaspoons dijon mustard

about a teaspoon of salt

2 tablespoons of white wine vinegar

2 - 3 drops of stevia

1 cup of light (near flavorless) olive oil 

I put it all in a plastic measuring cup and I set my immersion blender in the cup and pulse a few times until the emulsion forms and then lift the blender and incorporate the rest of the oil.

All the measurements are approximate after 7 years of making the mayo.  I also use other oils sometimes.  Avocado and macadamia are good, but only about a 1/2 cup of them added to a 1/2 cup of the light olive.  I use lemons or limes or apple cider vinegar in place of the white wine vinegar.  I add fresh herbs or garlic.  You can do all kinds of things.

The dressing is 

my mayo

tomato paste

minced bread and butter pickles that my husband makes

a couple of drops of stevia

a pinch of salt 

adjust until it tastes right

hope for a Rueben sandwich to fall into my lap.

Thank you!! I never thought of making my own mayo-I am unable to eat store bought-I am allergic to all kinds (they all have soy in it)
