Delicious low carb recipes, I have the hook up!

Trying to lose some weight but stuggling with nutritious meals your family will love? Here are some great low cal, low carb recipes that are sure to please even the pickiest husbands and kids. 


Mocktatoes-Mashed Cauliflower

1 medium head of cauliflower

2 TBSP cream cheese

1/4 C parmesan cheese

1/2 tsp garlic powder

1/8 tsp salt

1/8 tsp black pepper

3 TBSP butter

Clean and cut the cauliflower into small pieces. Boil for 6 minutes or until tender. Drain well and pat dry. Blend while still hot with all the ingredients. (You can leave the butter out and throw a TBSP on top of your scoop afterwards.)

67 calories and 9 carbs

I served it with grilled pork chops and bernaise sauce. A-MAZ-ING! Whole meal was 332 calories and 17 carbs (per serving) Serves 4.


Delicious Chicken Broccoli Alfredo with Spaghetti Squash

Spaghetti Squash, cut in half, cleaned, cooked and scraped

2 chicken breasts grilled or baked, diced

2 C fresh or frozen broccoli, boiled

1 jar Classico Creamy Alfredo Pasta Sauce (you can substitute with homemade or your fave brand)

1/4 C parmesan cheese


Combine all ingredients in an 8x10 baking dish, top with parmesan cheese. Bake for 30 minutes at 350. Serve with fresh fruit. 

485 calories and 22g carbs (per serving) Serves 4-6.


Noodle-less Lasagna

3 medium zucchini sliced 1/8 thick, grilled

1 jar of your favorite pasta sauce (I prefer Hunts)

16 oz ricotta or cottage cheese mixed with one egg

1 lb ground beef or turkey, browned and drained. 

1 package of pepperoni (yeah, that's right)

16 oz shredded mozzarella

Layer ingredients as you would a normal lasagna, making sure to layer the pepperoni on top of the sauce. Finish with a heavy layer of cheese. Bake at 350 for 45 min to an hour, until the cheese is melted and brown.

345 calories and 16g carbs (per serving). Serves 8.

NP, just remember they are high fat. Which is good if you are doing low carb.

I've made the mashed cauliflower and the taste was great but it had a horrible lumpy texture but I didn't use cream cheese. Does your recipe with cream cheese turn out lumpy and grainy?

Maybe a little grainy, but mostly creamy. Especially if you put the butter in when you blend, although it will be a little looser. Use an immersion blender, and slightly over cook your cauliflower for a creamier consistency.
