How you explain things that conflict with the bible to your children or others?

by that I mean things like the dinosaurs, we have scientific proof they existed, science says they were here before us, the bible says man was here in the first week.

or the evolution of man from  say cave man to modern day. we have scientific proof of that as well, but the bible mentions nothing of that,

Im just curious

I believe in the gap theory. It even says in the Bible that God's days are different than ours, they could be thousands of years.

I am religious but not Christian.
The Holt Quran says Allah created beasts of all kinds. Dinosaurs included.

Evolution is just a theory.

Also, thinking that Genesis 1 is talking about a literal week is extremely close minded.
