Side dish ideas

I feel like we've been eating the same sides over and over again! Tonight's dinner is homemade oven baked chicken strips. Idk if I want mashed or fried potatoes but they are a must have for DH. I need ideas for another side dish idea or two. Must be toddler friendly, annnnnd go!

My mom makes really, really simple potatoes, but they're so flavorful; I'm pretty sure she got the recipe off of Pinterest, lol.

Scrub your small potatoes (she uses small Yukon Golds), place in baking dish, pour some warm chicken stock over (mixed with garlic powder) to come halfway up the potato, add a pat of butter to the top of each potato, bake for an hour at 350 degrees. The outside stays a bit crispy and inside is glorious creaminess. ;)

Baked mac n cheese.

Super easy and super yummy. My 17 month old loves it.

Sauted green beans with tomatoes (sometimes I add onion or Parmesan cheese)
