Going to a chili cook off next weekend! I want to make the best chili ever lol.

ive found a few recipes online & picked things off of each one...but does anyone have an amazing chili secret they care to share?

Chipotle in adobo sauce and liquid smoke are two of my favorite things to put in. I do other stuff as well, but those are my 'secrets'!

Ground turkey, scallions, spices, peach salsa and frozen mango.

Toast some dried chilis, with cumin and oregano, then saute them with red wine vinegar and white wine. Make a paste out of the mixture.

Stew some plum tomatoes as your base, add the paste mixture (about 2 spoonfuls) and throw in your beans. Add dark chocolate and some molasses. Add diced onion. Cook down.

Roast a yellow pepper and a red pepper and toss in, cook down some more.

Serve and top with green onion.

Chipotle in adobo sauce gives it a wonderful smoky flavor. But just a little bit because otherwise its easy to make it too hot. I puree one or two of the peppers with a couple tablespoons of the sauce it comes in. And bacon. Use bacon along with whatever meat you use, ground beef or ground turkey or whatever you like. I prefer ground turkey in chili. Also, more than one kind of beans. Kidney beans, pinto beans, black beans, all good options.

Chilis, tomatoes, tons of spices! Then I let it cook on low for a couple hours. The longer it cooks, the better!
