Damn Cupcakes

I ordered and picked up 18 cupcakes yesterday for my son's Valentines Day party at school today. Well because of the weather school was cancelled today and now the party is rescheduled for thursday the 20th (there is a school break mon-wed). So now I am stuck with 18 cupcakes and I'm not sure what to do with them! Can I freeze them? I really dont want to have to order and pay for more cupcakes because that was his assigned treat to bring in.

Sheesh....I would have just cancelled the party all together. 

I don't think the frosting freezes well.

 If they were not frosted sure. But the frosting wont unfreeze well.

I don't know about the frosting but the cupcakes themselves will freeze fine.

I would try freezing them.pull them out on the 19th to assess

I guess they didnt want to cancel because most kids probably already got their cards ready to exchange.

The frosting is the part that I was worried about with freezing them!

I honestly suck at baking and would hate to embarass my son with my lack of cupcake skills lol!

This may be too much work, but maybe scoop the frosting off and then refrost t the day of?

first of all I think it's a bit rude of the teachers to assign stuff to bring it it should be strictly voluntary. At my local grocery store 18 cupcakes would run you about $15 and not everybody has an extra $15 in the grocery budget. Personally I wouldnt buy more. Freeze them and take them out the day before the party. They won't be as fresh but really the kids probably won't care either way

That might not be a bad idea and it would probably save me some money.
