I try, I do but it doesn't seem to work out. I ruined soup today, soup! I used too much onion and it tasted like hot onion water

That's how you learn, trial and error. Start out following a recipe, eventually, you may not need one.

Taste as you go, remember you can always add things but not take them away.

Me too sister. I try so hard and some of what I make is good...but other times it's a disaster and I thank the lord above for pizza delivery.

I used to be a horrid cook.  Literally, the first time I tried to make a steak, I set my kitchen on fire.

I started watching cooking shows to learn technique.  And then I just practiced.

When I first moved out, I had four meals I could make. Spaghetti with ground beef in tomato sauce, spaghetti with ground beef in mushroom soup sauce, spaghetti with chicken in tomato sauce and spaghetti with chicken in mushroom soup sauce. Eventually I branched out and now I'm a capable cook!

What kind of soup were you making and how did you do it? 

If it tasted like water, chances are, you didn't use broth...which is what gives soup flavor.

 I usually do! It's bad. Today however I was starting to feel confident and tried to wing it.
