Italian Rice Balls and Spaghetti Squash with marinara sauce

Italian Rice Balls:

  • 2 c. brown rice
  • 3 eggs
  • 1 c. shredded mozzarella cheese
  • 1 package frozen spinach, thawed, drained and dried (you can substitute one fresh bunch if you prefer.  Boil and blanch if using fresh)
  • 2 tablespoons of Italian bread crumbs (I used store bought, but you can make these yourself with three slices of bread, cut in cubes and tossed lightly with olive oil, garlic salt, and Italian seasoning) 
  • 1 teaspoon of Italian seasoning
  • 1 tablespoon of oil

Cook rice according to package (brown rice takes about 45-50 mins to cook) and mix with other ingredients while still warm.  Cover and put in the fridge and allow it to cool.  Scoop balls out with an ice cream scoop into a cast iron skillet (you can use any oven safe dish). 

Combine bread crumbs and vegetable oil until it is the consistency of sand.  Sprinkle on top of rice balls.  Bake for 25-30 mins at 350 degrees.

Spaghetti Squash

Bake whole for 40 mins at 350 degrees, slice in half and scoop out seeds and then shred with a fork.  Top with three tablespoons of marinara sauce and a bit of mozzarella cheese. 

Notes: Italian seasoning, bread crumbs, and the marinara sauce are the only things that can't be obtained through WIC, though bread crumbs CAN be made with the approved bread.

While the squash doesn't look appealing, the rice balls do!

We're big fans of spaghetti squash around here and it's SO cheap, so we eat that most of the time in place of pasta.

I had WIC when DD was alive, but only because she required a very special, and holy shit expensive formula that her insurance didn't cover.
