Help! Need eggplant recipes

I can't do unhealthy so no eggplant parm or fried eggplant. Any ideas?

I have baked mine with olive oil, salt, pepper, chili flakes and sesame oil. 

I have grilled mine with the above ingredients.

I have roasted mine with other vegetables.

I have shredded them finely and tossed them in salads.

I have cut them like french fries, covered them in panko crumbs, drizzled olive oil and baked them.

A recent recipe that I love:  brush an egg wash on the eggplant slices (I use baby eggplant whenever I can) and saute in olive oil with capers and squirt lemon juice on the eggplant when finished. 

I also like stir fried eggplant, shitake mushrooms, green onions and garlic and tossed with terryaki glaze.  Garnish with toasted sesame seeds and serve with brown rice.

MMMMM! I forgot about using it in Curry. It's so good! It soaks up all the flavors and keeps its meaty texture.

You can make eggplant pizzas.

Slice it thick. Spread sauce of choosing, sprinkle cheese of liking, top as you'd wish and bake until everything is bubbly.

We made eggplant parm last night it was great not fried just baked with a fresh tamato and mozzarella

Eggplant lasagna is yummy. I have made it with eggplant and zucchini. Alternating layers.
