Southern Moms WWYD?

I brined and then slow cooked a nice big fresh ham for pulled pork today.  It made a LOT of drippings, before I mopped with BBQ sauce.  Would you add the drippings back into the pork after pulling?  Half the drippings?  Not at all because the pork is greasy enough?

Health food weirdos need not reply.

I would use the drippings to make yorkshire pudding, but I live in the north.

I wouldn't put it back in. If your meat is dry, it wouldn't help. If it's not dry, it'll be way too greasy if you put it back. The BBQ should be enough.

And are you geographically qualified to offer that advice?

I'm from the south and I wouldn't add the drippings back.

I'm from louisiana, so I'd use the drippings to make rice dressing.

And did you use a cured ham or pork shoulder?
