i need/ want to make a pastry, like pie? is it possible? do you have a tried tested and true recipe?

and any other fail proof gf recipes for baked goods.

excellent question; i have almond, cocnut, rice, some potato flour/starch, xantam gum, hemp seeds, trail mixand a bag of robin hood nutri blend gf flour, cornmeal,tapioca strach/flour, sweet potato flour

Gluten-Free Pie Dough

INGREDIENTS

  • 1 cup gluten-free all-purpose flour
  • 1/2 teaspoon coarse salt
  • 1 stick cold unsalted butter, cut into small pieces
  • 1 large egg
  • 2 to 4 tablespoons ice water

DIRECTIONS

  1. In a food processor, pulse flour and salt until combined. Add butter and pulse until mixture resembles fine meal, with no large pieces of butter remaining. Add egg and 2 tablespoons ice water, then pulse until well combined and dough holds together when squeezed, 1 minute. If necessary, add up to 2 tablespoons more ice water, 1 tablespoon at a time.

COOK'S NOTES

To store, refrigerate, wrapped tightly in plastic, up to 3 days.

I just made this meringes from thekitchn.com Super easy, but not pastry. The website might be worth checking out for gluten free ideas.

I just use pilsbury pie crust from target. The gluten free one comes in a tub and makes two crusts.

Bob's red mill gf pie crust. yes it comes in a package but it works so much better than me mixing up the different flours.

Light and Fluffy Gluten Free Dinner Roll

Ingredients

  • 2 tablespoons active dry yeast
  • 2 cups warm water
  • 1/3 cup oil
  • 1/4 cup sugar
  • egg
  • 1 teaspoon salt
  • 2 tablespoons xanthan gum
  • 1 1/4 cups white rice flour
  • 1 cup brown rice flour
  • 3/4 cup potato starch
  • 1/3 cup tapioca starch

Cooking Directions

  1. In the bowl of a mixer, dissolve yeast in warm water. Add sugar and let sit for about 5 minutes.
  2. Add remaining ingredients, adding the xanthan gum last. . Mix using the dough hook of an electric mixer.
  3. Mix for about 5 minutes, scraping down the sides of the bowl a few times. You do not knead this like a regular bread dough, but it does need mixed well and I have found about 5 minutes is a good time.
  4. Scoop onto a greased cookie sheet. The dough is a wet dough, so I found that using a large ice cream scoop works best for this. This makes 12-15 rolls.
  5. Cover rolls loosely with a kitchen towel and let rise for about 1 1/4 to 1 1/2 hours.
  6. Bake at 425 degrees for 8-10 minutes or until done.
  7. Enjoy!
