Can I use a beef roast for this?

I have a beef round rump roast or something like that. The kind you'd use for pot roast. But I really want to make beef and broccoli. Could I use the roast for that? The recipe just says slice beef thin, it doesn't specify a specific cut.

I probably would not, it will be too greasy....

I don't think a roast would be too good for beef and brocolli, which sounds really delicious and now I'm going to look up a recipe :).  Flank steak maybe?

All I have for beef is the roast.

It might be tough.  Cut your strips, then pound the heck out of them with the meat tenderizer.

Even if I trim the fat?

I've used that before and it came out fine. Just slice it thin. Good luck

That's not good for what you're trying to do.

Oh hey wait, what about slow cooker beef and broccoli?  Put the roast and sauce in the crockpot, let it go for hours until you can shred the beef, then add broccoli like 15 minutes before serving (so it doesn't dissolve into mush).  Serve over rice.

It's too late for a slow cooker meal. I need it done in two hours. And if I don't use the roast tonight I'll have to toss it.
