A woman I work with asked me on a date. I made sure she knows I always dated men and only had a couple small experiences in my younger years and she said she's still wanting to go out.

I want to say yes because I'm open to trying new ideas but I am nervous

If you don't like women, why would you even think about this? It is a co-worker. You can't choose to be a lesbian. So you won't magically get a spark. Then it is just going to be awkward the next day.

just because you've only dated men doesn't mean you are completely straight.. some people are bi. it's not a person has to be completely straight or completely gay.
if you feel an attraction toward her, I'd consider going.. if you don't, then you need to be frank about that from the beginning.
