Anyone else husband could care less about date night? It should be a big deal to both, right?

I don't really think date night warrants being a "big deal," but it should be of about equal importance to each person of the couple in order for things to go the smoothest. But that doesn't mean it always will, or *has to.* compromises can be made.

Maybe I should clarify big deal. I didn't mean make it over the top. Just show effort of where we should go what we should do.

I wouldn't make that into a big deal. Not everyone is as big into planning that kind of stuff. When we go out, DH couldn't care less what we did or where we went. He just wants to be together. I would focus on the experience when you go out, not the fact that your partner didn't pick the restaurant.
