Butternut squash

Anyone have any ideas on a main dish (animal product free) that isn't roasted butternut squash, plain butternut squash soup or using it to make a faux cheese sauce? I have some and want to make something different than I typically do.

I'm considering a risotto, but I'm not sold on using it for that.

I made some vegan curry yesterday using onions and chickpeas. I found the recipe on Pinterest. You can use butternut squash in it also.

You can make vegan lasagna with it. I also frequently make a bean kale soup with butternut squash. Quinoa stuffed squash is also good.

Edit: Black bean and butternut squash street tacos are delicious, too.

I make curry with it. I use fish sauce and sometimes ground pork but u could probably find substitutes.

I bake my butternut squash for 400 for an hour (sliced in half and sliced side down).

Scrape it into a pot. Add coconut milk and coconut water. Add salt and pepper. Can add a little curry paste if wanted. Blend it up.

Butternut squash spinach pasta

The butternut squash is used as a pasta sauce served with pasta and spinach

Also, cube it with onion chunks and bake it with a sauce blended of EVOO, garlic, balsamic vinegar, salt, and pepper. Bake it at 400 for an hour or until caramelized. Stir it half way. I usually add other veggies. Especially Brussels sprouts.

Butternut squash ravioli with sage brown butter.

You can usually find butternut squash ravioli in the fresh pasta section of your grocery store.  Or you can pureed cooked butternut squash and use wonton wrappers or pasta sheets.
