Fiesta theme birthday party

What would you hope was served?

We are planning:

Enchiladas (some chicken and some beef)

Red rice

Taco bar 

Tortilla chips and salsa (could also be nachos using taco bar items)

7 layer dip

Then of course beverages and cake.


Would you hope for anything different? I want there to be enough variety, but there's also only going to be under 20 guests total including ourselves. I know I shouldn't over think it lol. This is for our sons first birthday which is also the first meal we are inviting people into our new home so I just want it to be nice.

Sounds good to me!!


My nephew had a party on Sunday for his kids second birthday and ALL they served was hot dogs, grillled chicken and chips. For dinner. 😂

I'm lucky my mother in law always helps cook and prepare food for parties too. I can count on whatever I make, there being double the amount of food. She is supplying all the items for the whole taco bar.

That is a lot of variety for 20 people. Are you having it catered or are you cooking it yourself? If you’re cooking, I’d scale it way back.

Sounds great! Are young kids going to be there? If so, a pinata might be a fun activity.

Sounds yummy!! We love stuff like that. What time is the party I'll be there lol? My son's 13th birthday is Saturday. Oh laws help me I'll have two teens in my house. Happy 1st Birthday to your son.

I hope so! My mother in law offered to bring all the items for the taco bar so that's pretty awesome. I've been looking forward to it and felt like it was going to be great and then today as I was making my shopping list I suddenly got concerned that it wasn't enough choices.

Equal parts Velveeta Cheese and Salsa heated together and served with tortilla chips. (Kept warm in a mini crock pot)

Flour tortillas spread with butter, sprinkled with cinnamon sugar, and heated in the oven. Cut into thin wedges and served as dessert.

Cinnamon ice cream

Have fun! Sounds like you have a great menu planned already!
