Crockpot chili

1 lb ground beef cooked, crumbled and drained
2 cans (or equivalent) red beans
2 cans (or equivalent) crushed tomatos
1/2-1 small yellow onion, chopped
4-5 cloves garlic, chopped
1 packet (or equivalent) chili seasoning

Dump all in crock pot, mix, turn on high for 4 hours. Stir once an hour or so. Serve with ritz crackers for a spoon or garlic bread.

I only have one.

Chicken Crap

About 4 good sized boneless skinless chicken breasts
2 small cans or one family size can of cream of chicken soup
2 boxes stovetop stuffing
SOME (like how exact this is? Lol) shredded mozerella cheese

Cut chicken into 1 inch or smaller cubes and fry them in pan just until they're all white.
Make up boxes of stuffing as directed.
Put chicken evenly into a 9x13 baking dish. Cover with cream of chicken soup (DON'T add water or milk!!) Cover that with a layer of cheese. Cover entire dish evenly with stuffing.
Bake uncovered @ 350 for about half an hour, or until cheese bubbles. Take out of oven and add more cheese (we love cheese!)

ENGLISH MUFFINS

These are so yummy and easy. You'll never want store bought again!!
1cup milk
3 tablespoon butter
1 egg
1/2 teaspoon salt
2 teaspoons sugar
3 cups all-purpose flour
1 1/2 teaspoons dry yeast
cornmeal

Mix all wet ingredients together, then add the dry ingredients, flour last.  Mix with a fork until too hard to stir, then turn onto a floured surface and knead until smooth an elastic.  Let rise in a greased bowl covered with a towel until doubled.

Turn out onto lightly cornmealed surface and pat out with your hands until 1/2 inch thick.  Cut into rounds, dip both sides in cornmeal, and let rise for 20 to 30 minutes until almost doubled in size.

Heat a dry cast iron skillet or griddle over a low flame.  (I do spray mine with Pam).  Cook the muffins about 5 to 7 minutes on each side.  They should be golden brown when you turn them.

Split the muffins with a fork or serrated knife and serve warm.  These also freeze well and can be reheated in the microwave or toasted.

Shepards pie

1 lb cooked, crumbled, drained ground beef
1 can (or equivalent) corn
Mashed potatos (or tater tots)
Cheese

Layer all ingredients with cheese on top (I do corn or beef, potatos, corn or beef, cheese - everything sticks to the mashed potatos). Heat until warm through and cheese is melted.

Brown rice and black beans

1 tsp olive oil
1 onion, chopped
4+ cloves garlic, chopped
3/4 cup uncooked brown rice
However much veggie or chicken broth the rice says water
2 tsp ground cumin
1 tsp paprika
3 1/2 cups (or 2 cans) rinsed and drained black beans

Sauted onions and garlic in stockpot over medium high heat for 4 minutes. Add rice and saute 2 more minutes. Add broth and cook for stated time (however long the rice bag says). Add spices and beans, stir and serve.

Alternate serving (usually we do it with leftovers): fry rice and beans, warm tortillas. Serve burrito style with toppings. (We use) cheese, sour cream, bacon bits, lettuce, tomato, etc.

Can add other veggies to rice and beans.

Pasta and black beans

cups of small seashell pasta
1/3 cup of Italian dressing
1 can black beans
1 can pinto beans
1 can whole kernel corn drained
3 tomatoes chopped
1 1/2 tbls ground cumin
1/2 tbls chili powder
1/2 tsp onion powder
1/5 tsp garlic powder
1/4 tsp dried red pepper flakes

Cook your pasta. Then drain, place in large bowl, add dressing. Put beans in colander and rinse then add to pasta. Add the spices toss lightly then chill it in the fridge

Crockpot Chicken Ranch

1 lbs of chicken
1 can cream of mushroom
1 can cream of chicken
1 packet of dry ranch mix

Put everything in the crockpot. Turn on low and cook for 4-5 hours. Shred chicken (whe, it's done it will shred very easily) serve on rice

Crockpot Black beans and chicken

1 lbs of chicken
1 can of black beans
2 cups of salsa

All everything to the crockpot cook for 4-6 hours. Shred chicken. Serve on rice or in whole wheat tortillas with cheese and sour cream
