I'm really trying to feed my family less processed foods but with hubby and I both working full time jobs it is really hard sometimes. I find myself picking up my youngest daughter from daycare and it is so late I just endup throwing some chicken in the oven and grab for a box of mac and cheese and canned veggies. I figured if I could find some good slow-cooker recipes I could throw everything together in the crock-pot when I get home from work before going to bed (I work nights) and everything would be ready when everyone gets home. Thanks ladies. I am really glad I found this group.
Bottom layer- sauce (and meat mixture if you add meat)
Next- uncooked lasagna noodles. Break them and overlap a little to make it fit.
Ricotta cheese (and I put shredded cheese, too. )
Repeat layers till full.
Cook on low for 4-6 hours. I had a little over half a pot (only 1 jar of sauce) and cooked for 4 hours. Noodles were a little soft for my taste, but otherwise- it was yummy.
Spaghetti sauce with meatballs
2 29-30 ounce cans Hunts tomato sauce
1 cup diced onion
3 tsp minced garlic
4 tbls dried basil
4 tbls dried oregano
1 tsp dried crushed bay leaves
1 tsp garlic powder
1 large can tomato paste
1 cup parm cheese
1 lbs ground beef
1 cup seasoned bread crumbs
1 egg
1 tbls water
First mix ground beef, bread crumbs, eggs and water together. Set aside. Next mix everything else in the crock pot, roll meat mixture into medium size ball and drop in to crock pot. Cook on low 7-8 hours.
1 lbs chicken
1 can black beans drained
1-2 cups (about a whole jar) salsa
Place everything in crockpot cook on high for 6-7 hours. Serve in tortillas or over rice.
1 lbs of chicken
1 can cream of mushroom
1 can cream of chicken
1 packet of dry ranch mix
Throw it all the crock pot cook on low for 6-7 hours, serve over rice.
A roast, depends on how big you want it.
Carrots
Potatoes
Golden mushroom soap
1 to 2 cans of water
1 packet of french onion soup dry mix
Throw everything in the crockpot. Use as many potatoes and carrots as you want. Make sure to cover your veggies with water. Shred meat when fully cooked. Serve as is.
Ingredients
1 medium eggplant, unpeeled and chopped
2 medium zucchini, chopped
1 bell pepper, chopped
1 onion, chopped
2 or 3 ripe tomatoes, chopped
2 (15 ounce) cans garbanzo beans, drained
1 (14 ounce) can artichoke hearts (in water, not oil), quartered, optional
1 tablespoon dried oregano
freshly ground black pepper and salt, to taste
red pepper flakes, to taste, optional
Directions:
1. Put ingredients in a crockpot (the night before has worked well for me).
2. Cook on low all day, or on medium to high for shorter period. Serve on rice or noodles
Hearty Crockpot Soup
Ingredients:
1 onion, chopped
1 red bell pepper, chopped
1 (15 ounce) can whole kernel corn, drained
2 (15 ounce) cans chopped tomatoes
2 (15 ounce) cans pinto beans (I use 2 1/2 cups cooked pinto beans)
1 cup water
1 (1 1/4 ounce) package chili seasoning mix
Directions:
1. Put everything in a crockpot and mix well.
2. Simmer all day, about 8 hours.
