I can't get enough of avacodos and guacamole.  Do you eat them and what do you make with them?

We do eat them. My hubs will just cut one open and sprinke garlic salt and oniin powder an it with some red pepper flakes and it that way. He also makes guac with just mayo and some lemon juice. We put it on sandwiches and also make a pasta sauce out if them.

Love them! They are really expensive though. I like guacamole, but my fave is to just have them sliced with a bit of salt and pepper!
I also use them instead of mayo or dressing on sandwiches!

When I was little my mom would spread some mashed up avacado on toast as a treat. We have like 4 in our fridge though we use them a lot. Maggie loves them.

I LOVE avocado. Try this recipe:

4 avocados
1 can corn (or bag of frozen or fresh nibblets)
1 can of black beans (or rehydrated black beans)
1 orange pepper, seeded and diced
1 red pepper, seeded and diced
1 yellow pepper, seeded and diced
Fresh cilantro
Lime juice
salt

In a bowl, mix the beans and veggies. Slice the avocado into chunks and mix with the beans and veggies. Pour on lime juice until everything is well coated. Chop cilantro and add. Add salt to taste. I serce as a side dish or as an appetizer with scoop tortilla chips. It's best if you let it sit overnight in the fridge, the lime juice should help the avocado from turning brown.
