Pepper Steak
- 1 lb beef top round steak, cut 1 inch thick
- 2 teaspoons olive oil
- 1 medium onion, sliced thin
- 2 cloves garlic, minced
- 1 cup beef broth
- 1/4 cup light soy sauce
- 1/4 teaspoon sugar
- 1/2 teaspoon pepper
- 1 stalk celery, sliced
- 1 green bell pepper, sliced thin
- 1 red bell pepper, sliced thin
- 1 yellow bell pepper, sliced thin
- 1 can chopped tomato, drained or 2 medium tomatoes blanched,peeled and cut into wedges
- 2 teaspoons cornstarch
- 1/4 cup cold water
Slice beef into 1/4" strips no longer than 3".
Heat 1 Tbsp. oil in skillet on medium high heat and saute onion and garlic until tender. Remove with a slotted spoon.
Add rest of oil and beef and cook until beef is browned. Remove with a slotted spoon.
Add broth, soy sauce, sugar and pepper to skillet. Stir well. Return onions, garlic and beef to skillet, cover and simmer about 30 minutes.
Add celery, peppers, and tomatoes and cook until crisp tender, about 5 minutes. Dissolve the cornstarch in the cold water and slowly stir into the skillet until thickened, about 2 minutes. Serve over hot rice.
Easy Sesame Beef with Vegetables
- 1 lb. boneless sirloin
- 2 Tbsp. sugar
- 2 Tbsp. vegetable oil
- 2 Tbsp. soy sauce
- 3/4 tsp. black pepper
- 3 green onions, with tops, sliced
- 1 Tbsp. (6 cloves) minced garlic
- 2 to 3 tsp. sesame seed
- 2 tsp. vegetable oil
- 1 - 2 tsp. cornstarch
- 2 carrots, peeled and sliced diagonally
- 2 stalks celery, peeled and sliced diagonally
- 1 bunch fresh broccoli, flowerets trimmed and stalks sliced diagonally, or 1 bag frozen broccoli
Trim fat from beef and slice diagonally across the grain into thin slices. Mix next 6 ingredients and pour 1/3 of it over the beef. Stir until beef is well coated. Refrigerate extra marinade and beef in marinade 30 minutes or overnight (covered).
Drain beef.
Cook and stir sesame seed over medium heat until light brown. Remove from skillet.
Heat remaining oil. Add beef and cook until browned, about 3 to 4 minutes.
Heat remaining marinade with cornstarch until thickened while the beef is browning
Add veggies to beef, cover and cook until veggies are crisp tender. Add thickened marinade, stir to mix. Sprinkle lightly browned sesame seeds on top and serve with hot rice.
Spanish Beef & Rice
- 2 lb. steak, cut into strips (I used sirloin)
- 1 15 oz. can diced tomatoes
- 1 10 oz. can Rotel tomatoes with chilies
- 8 oz. can tomato sauce
- 1 medium onion, sliced
- salt and pepper to taste
- vegetable or canola oil
- hot cooked rice
Place strips in a plastic bag or bowl; add enough salt and pepper to taste and mix very well. In heavy skillet (I used my electric skillet) brown the seasoned steak strips in hot vegetable oil; saute onions with the beef strips. Add tomatoes, Rotel tomatoes with chilies, and tomato sauce. Cover and cook on medium low heat (about 275°) until done. Serve over hot rice.

Garden Burgers
- 1 lb. ground beef
- 1/2 c. yellow summer squash, finely chopped
- 1/2 c. zucchini, finely chopped
- 1/3 c. fresh broccoli, finely chopped
- 1/4 c. red onion, finely chopped
- 1/4 c. packed spinach leaves, finely chopped
- 1/4 c. finely chopped or grated carrots
- 6 basil leaves, finely chopped (or 1 tsp. dry basil)
- 2 Tbsp. parsley, finely chopped
- 1/2 tsp. sea salt (or regular salt)
- 1/8 to 1/4 tsp. ground black pepper
- 1 - 2 Tbsp. coconut oil (or vegetable oil if you prefer)
Heat oil in pan over medium heat.
Add onion, cook for 2 minutes.
Add broccoli, cook for 2 minutes.
Add carrot, cook for 2 minutes.
Add summer squash and zucchini, cook for 2 minutes.
Add spinach, cook for 1 minutes.
Remove pan from stove, allow veggie mixture to cool slightly.
In large bowl combine ground beef, veggies, herbs, and spices. Mix well
Grill or fry for about 5 minutes per side.

Copycat Manwich
- 1 lb. ground beef
- 8 oz. tomato sauce
- 1 cup. ketchup
- 1 Tbsp. dried onion flakes
- 1 Tbsp. chopped green pepper
- 1 tsp. salt
- 1 tsp. prepared mustard
- 1/2 tsp. minced garlic
- 1/2 tsp. chili powder
- 1/4 tsp. celery seed
Brown ground beef. Mix rest of ingredients together and add to browned meat. Simmer for 5 to 10 minutes and serve on toasted buns.
Hungarian Beef
2 - 3 lb. beef roast
1 large onion, sliced
1 clove garlic, minced
1/2 c. ketchup
2 Tbsp. Worcestershire sauce
1 Tbsp. brown sugar
2 tsp. salt
2 tsp. paprika
1/2 tsp. dry mustard
1 c. water
1/4 c. flour
Place meat in crock pot; cover with sliced onion. Combine rest of ingredients but water and flour; stir in water. Pour over meat. Cover and cook on low for 9 to 10 hours. If you would like to thicken the tasty sauce, then turn to high about 30 minutes before serving. Dissolve flour in a small amount of cold water; stir into sauce mixture in crock pot. Cook until slightly thickened. Serve over noodles, potatoes, or rice.
Note: You can also add potatoes about 4 - 5 hours before cooking time is done.

Ingredients:
2 lbs. Ground Turkey, Beef, or Pork
2 Eggs
1/2 c. Parmesan Cheese
2 Tbsp. Penzey's Italian Sausage Seasoning
1 c. Mozzarella Cheese
Pizza Sauce
Sauteed Veggies
Directions:
Mix ground meat, eggs, parmesan cheese & seasoning (I use my hands).
Line a jelly roll pan with aluminum foil and pat mixture in pan. Bake
at 450 for 10 minutes. Depending on the fat content of your meat there
may be fat that needs to be drained from the pan. You can also blot the
top with a paper towel. Top meat base with sauce, veggies and cheese and
broil until cheese is nicely browned and bubbly.
Note: I used 1 lb. ground beef and 1 lb. hot Italian sausage and eliminated the Italian sausage seasoning.
MERLOT FILET MIGNON 2 beef tenderloin steaks (8 oz each)
3 tbsp butter, divided
1 tbsp olive oil
1 cup merlot
2 tbsp heavy whipping cream
1/8 tsp salt
Instructions:
1) In a small skillet, cook steaks in 1 tbsp butter and oil over medium high heat for 4-6 minutes on each side or until meat reaches desired doneness (for medium rare, a meat thermometer should read 145; medium, 160; well-done, 170) remove and keep warm.
2) In same skillet, add wine, stirring to loosen browned bits from pan. Bring to a boil; cook until liquid is reduced to 1/4 cup. Add the cream, salt and remaining butter; bring to a boil. Cook and stir for 1-2 minutes or until slightly thickened and butter is melted. serve over steaks.
