Low Carb Beef & Cheese Spaghetti Squash Bake
1 Tbsp. olive oil
1 onion, chopped
2 garlic cloves, minced
1 carrot, peeled and shredded
2 stalks celery, chopped
1 lb. ground beef
28 to 32 oz. spaghetti sauce (I made my own from tomato sauce and herbs)
1 tsp. oregano
1 large spaghetti squash, cleaned and baked and strands scooped out into a large bowl
2 c. shredded cheddar cheese
1/4 c. grated Parmesan cheese
Preheat oven to 350°.
Heat olive oil in large pan; cook onion, garlic, carrot, and celery, stirring often until onion and celery are clear (not necessarily tender). Add ground beef and cook until no pink remains. Add sauce and oregano and simmer for about 15 minutes (I skipped the simmering step.)
Add
beef & sauce mixture to spaghetti squash. Stir to mix well. Pour
into baking dish (I used a 9 x 13 pan) and top with cheddar cheese.
Bake uncovered for 15 minutes, top with parmesan cheese, and bake
another 5 to 10 minutes. Serve.

When all patties are browned, cover with 2 cups water and rest of beef boullion. Cover with lid and simmer for about 15 minutes. Remove patties to a plate and make gravy by slowly adding the cornstarch/water mix. You may add more water and beef boullion granules to taste.
Herb-Ox brand of bouillon cubes doesn't contain gluten. It's said that most bouillon in powdered form is also gluten-free. Wheat gluten is used to bind the bouillon together to make the cubes in most cases, but there is the occasional gluten-free brand.

CROCKPOT CARNE GUISADA
- 2-3 pound chuck roast, trimmed and cubed
- 1 small onion, diced
- 1 can Rotel with green chilies, or 15 oz. can diced tomatoes and 4 oz. can green chilies
- 14 ounces beef broth
- 2 tablespoons chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- Salt and pepper, to taste
Place beef in crockpot. Mix rest of ingredients in a bowl. Salt and pepper beef to taste and add the mixture in the bowl to the crockpot. Cover and cook on low for 6 to 8 hours or on high for 4 to 5 hours until the beef is very tender. Remove the beef cubes to a plate (can shred with forks if you like.) Add liquid from pot as desired until meat is moist but not soupy. Serve in low carb tortillas or over chopped lettuce, if desired. Top with whatever you like from cheese and sour cream to guacamole, etc.

Bacon Cheeseburger Skillet meal
- 12 oz. bacon, cooked and crumbled
- 2 lb. ground beef
- 1 small onion, chopped
- 1 clove garlic, minced (1/2 tsp.)
- 8 oz. fresh mushrooms, sliced
- 3/4 tsp each salt and pepper
- 15 oz. can tomato sauce
- 1/2 medium cabbage, shredded (about 16 oz.)
- 8 oz. Deluxe American or Cheddar cheese, diced (do NOT use cheese food)
In a very large skillet or Dutch oven, brown the ground beef with the onion, garlic, and mushrooms. Season with salt and pepper. Add the tomato sauce and cabbage; stir to coat the cabbage with the sauce. Simmer uncovered for about 10 minutes until the cabbage is tender. Stir in the bacon and diced cheese; stir until cheese is melted. Serve.
This is kid approved! Even my DD ate it right down, and she's not crazy about spinach.
Low Carb Beef & Spinach Bake
- 2 lb. ground beef
- 1/2 c. diced onion
- 10 oz. pkg. frozen spinach, thawed and drained
- 4 oz. can mushroom stems & pieces, drained
- 2 eggs, beaten
- 4 oz. grated mozzarella cheese
- 1/4 c. Parmesan cheese
- 1 tsp. garlic powder
- salt and pepper to taste
- 2 Tbsp. butter, melted
Brown ground beef with onion. Combine rest of ingredients except butter in a large bowl and stir to mix; add cooked beef & onion and stir until mixed. Spread mixture in a baking dish and drizzle with melted butter. Bake at 350°F for 25 minutes.

Slow Cooker Au Jus Pot Roast |

1 (4 pound) boneless beef chuck roast 1 tablespoon Worcestershire sauce, or to taste 1 tablespoon Montreal-style steak seasoning 2 tablespoons olive oil |
1 cube beef bouillon 1 cup hot strong black coffee 1 (8 ounce) can tomato sauce 1 teaspoon dried oregano, or to taste 2 teaspoons Worcestershire sauce, or to taste |
| 1. | Rub chuck roast with 1 tablespoon Worcestershire sauce and sprinkle on all sides with steak seasoning. |
| 2. | Heat olive oil in a large skillet over medium-high heat. Sear the roast in the hot oil until browned, about 5 minutes per side. Transfer roast to a slow cooker. |
| 3. | Dissolve beef bouillon cube in the coffee and pour the mixture over the roast. Pour tomato sauce over meat and season with oregano; drizzle meat with 2 teaspoons Worcestershire sauce. |
| 4. | Set cooker to Low and cook until meat is tender, 8 to 10 hours. |
