These recipes do not use fluffed up gluten substitutes.  Some of the ingredients may be a bit expensive and may be hard to find, but they are made of real foods, not manufactured substitute food.

Many of the recipes use almond meal.  To make your own almond meal, freeze the almonds first, then process the frozen almonds in a food processor until of coarse texture, not powder. 

I've also done this with sunflower seeds.

Paleo Pumpkin Muffins


  • 1½ cups almond flour
  • 3/4 cup  canned pumpkin (or cook and puree pumpkin yourself)
  • 3 large eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp  ground cinnamon
  • 1½ tsp pumpkin pie spice
  • 1/8 tsp sea salt
  • 1/4 cup raw honey (optional)
  • 2 tsp almond butter
  • 1 Tbs sliced almonds


  1. Preheat oven to 350℉.
  2. Coat 6 muffin tins with coconut oil (or use paper muffin cups and add 1/2 tsp melted coconut oil to batter).
  3. Mix all ingredients and pour evenly into tins.
  4. Bake for 25 minutes on the middle rack.
  5. Sprinkle almonds on top immediately after taking them out of the oven.

Cauliflower Pizza Crust

2 tsp. garbanzo, almond, or coconut flour

1 c. cooked & riced/slightly mashed cauliflower

1 egg

1 c. mozzarella cheese

1/2 tsp. parsley

1/2 tsp. oregano

Preheat oven to 450°.  Grease a cookie sheet or pizza pan.  Mix the cauliflower, flour, egg, and cheese.  Press into the pan.  Sprinkle on the herbs.  Bake 12 to 15 minutes.  Remove from oven and top with favorite sauce & toppings and cheese and bake again until cheese melts.

Cream Cheese Deep Dish Pizza crust

6 eggs

6 oz. cream cheese

1 tsp. garlic powder

1 1/2 tsp. oregano or Italian seasoning

1/2 tsp. salt

pinch of black pepper

1 c. shredded Italian cheese, at least 1/2 must be parmesan or Asiago

Heat the oven to 350° F.

Be sure the cream cheese is at about room temperature. Using a regular blender, food processor, or stick blender, mix the egg and cream cheese until well blended. Add the salt and spices and blend again.

2) Spread cheese in bottom of well-buttered 9X13 pan.  Pour egg mixture over the cheese, and bake for 22-25 minutes, or until the top is browning.

3) Remove from oven, add pizza toppings, and bake until done - about another 10-15 minutes.

Makes 8 servings.

Nutritional Information: Each serving has 1.5 grams effective carbohydrate plus 11 grams protein, and 179 calories.

Pizza Crust


3 eggs

1/2 cup of coconut flour.

1 cup of organic full fat coconut milk

2 tsp of garlic powder

1/2 baking soda

1 crushed garlic clove


preheat your oven to 375°

Prep cookie sheet or pizza pan by covering it with parchment paper to fit the bottom of the pan.  Brush with coconut oil.

lightly beat eggs, milk and garlic in a bowl till smooth. Mix wet and dry ingredients and whisk well until it thickens up a little.  This will be more like a batter….not so much dough. Sorry no pizza dough throwing or spinning!

Spread the batter on the already prepped pan.

Bake for 20 mins or until it’s golden brown.  Remove from oven. Flip over (carefully).

Add your toppings.

Broil for for about 10 mins, checking making sure not to burn the edges.

Here's a recipe for cookies that are unbelievably delicious!  I couldn't keep my fingers out of the dough!

Sunflower Seed Cookies

1 c. sunflower seed flour (simply process raw sunflower seeds in a food processor and blend until the consistency of a fine meal)

2/3 c. raisins

1/2 c. honey

1/4 c. coconut flour (you can use all purpose if you're not eating gluten free)

1/4 c. shredded coconut

4 tsp. vanilla extract

Preheat oven to 350°. Mix all ingredients in a bowl.  Scoop cookies onto parchment paper lined baking sheet.  Bake for 11 - 12 minutes until cookies are lightly browned on the edges.  Allow to cool completely before enjoying!

Makes about 18 cookies.

Cabbage Spaghetti

1 lb. ground beef

2 medium onions, chopped

28 oz. jar spaghetti sauce (or make your own)

3/4 - 1 medium head cabbage, cored and sliced thinly

1 - 2 c. mozzarella cheese

Brown the beef with the onions.  Add the spaghetti sauce.  Add cabbage, a handful at a time and mixing in before adding more.  Cover and simmer until cabbage is tender.  Top with mozzarella cheese and cover again until cheese melts.  Serve.

  • Gluten Free Oven Fried Chicken:

    • 3 to 4 lbs. chicken parts (breasts, thighs, drums),
    • 1 1/2 c. mashed potato flakes,
    • 1 Tbsp. parmesan cheese,
    • 1 tsp. paprika,
    • 1 tsp. garlic salt,
    • 1 tsp. salt,
    • 1 tsp. pepper,
    • 2 eggs,
    • 1/2 c. margarine.

    Mix potato flakes, cheese and spices together. Beat eggs and 2 Tbsp. water with fork. Dip chicken pieces in egg mixture then roll in mashed potato flakes mixture. Place in a foil lined cake pan. Melt margarine and pour over chicken. Bake at 375 for 30 minutes, turn chicken pieces and bake another 30 minutes.

Rosemary chicken & potatoes

  • 6 bone-in chicken thighs
  • 1 1/2 lbs. red potatoes, cut into 1 inch cubes
  • 2 Tbsp. vegetable oil
  • 2 tsp. paprika
  • 1 1/2 tsp. crushed rosemary leaves
  • 1 tsp. dry minced garlic
  • 1 tsp. salt
  • 1/2 tsp. ground black pepper

Mix oil, spices and salt in a large bowl. Add chicken and potatoes; toss to coat well. Arrange chicken and potatoes in single layer on foil-lined cookie pan sprayed with cooking spray. Roast in a preheated 425°F oven 30 minutes or until chicken is cooked through and potatoes are tender, turning potatoes occasionally.
