We love this stew! Everything in brackets is my substitutions and such.

Indian beef stew

1 lb beef (cut into 1-inch cubes) (1 1/2 LBS)
1 potato (cubed) (SUBBED SWEET POTATOE)
1 red onion, thinly sliced
4-6 garlic cloves, big garlic cloves finely chopped (2TBL MINCED)
Ginger, 3 inches, finely chopped (SUBBED 1/2 TSP GINGER POWDER)
8 green chilies (indian green chilies slit lengthwise) (DID NOT USE)
(SPRINKLE OF DRIED RED PEPPER WHEN BROWNING MEAT)
12 curry leaves (SUBBED 6 BAY LEAVES)
1/2 tsp black pepper
1/2 tsp fennel seed
piece cinnamon, 1 inch, stick
4 cloves whole
3 cardamom pods (SUBBED 1/4TSP NUTMEG)
1/2 tsp red chili powder
1/4 tsp turmeric powder
2 bay leaves
1 1/4cups coconut milk (1 CAN TOTAL USED)
3/4 cup water
salt
2 tbsps coconut oil

Marinate the beef cubes with salt,pepper,4 green chillies,garlic and half the quantity of chopped ginger for half an hour. (SKIPPED)

Pressure cook the meat till tender with 1/4 cup water. Reduce the liquid till you get a thin film of gravy at the bottom of the cooker. (BROWNED BEEF W/GARLIC AND A DASH OF RED PEPPER FLAKES, ADDED ABOUT 1c OF WATER AND COOKED FOR ABOUT 1 HOUR)

Separately,boil the potato cubes with a pinch of salt,drain and set aside. (ADDED RAW SWEET POTATOE WHEN ADDING ONION MIXTURE TO THE BEEF)

Next,heat the oil in a pan and fry fennel seeds, cinnamon, cardamom, bay leaves and cloves for 30 seconds.

Then add the onion, remaining green chillies and ginger along with 6 curry leaves. Saute till onion turns limp and translucent. (ADDED ALL 8 BAY LEAVES)

Add the cooked beef (with remaining gravy),red chilli powder, turmeric powder and potatoes.Stir well.

Then reduce heat to low and add half cup coconut milk diluted in 3/4 cup water and salt. Cover and cook for 15 minutes.

Finally, increase to medium heat, add the remaining 1/2 cup coconut milk and bring to a boil.

Add the rest of the curry leaves and cook on low heat till the gravy is not too runny
(ADDED A LITTLE RICE FLOUR TO THICKEN).

Mockaroni & cheese

  • 1 head cauliflower or 16 oz. frozen cauliflower
  • 4 oz. cream cheese
  • 2 Tbsp. heavy cream (milk will work)
  • 8 oz. shredded cheddar (divided)
  • 2 green onions, finely chopped
  • 1/4 to 1/2 tsp. salt
  • 1/2 tsp. pepper

Cook the cauliflower until tender; drain well. In a 1 1/2 quart casserole, mix cream cheese, 4 oz. cheddar, and cream.  Stir well until cream cheese is creamy and smooth. Stir in the green onions, salt and pepper. Add the cauliflower and gently fold into the cheese sauce to coat well. Adjust the seasonings if needed. Top with the remaining 4 ounces cheese and bake at 350º for 35 minutes, until bubbly and brown on top.

Makes 4-6 servings
Can be frozen

Almond Flour Pie Crust (single crust)

  • 1 c. almond flour
  • 1 egg
  •  1/2 tsp. vanilla extract
  • 1 Tbsp. melted butter
  • 1/2 tsp. cinnamon
  • honey to sweeten (optional)
  • pinch of salt


Mix all ingredients together until they form a ball.  You may want to add a little extra almond flour if dough is too sticky.  Smooth pieces of dough up the sides of a pie tin and then on the bottom using your fingers.  Press together so dough covers evenly.

If making pudding/cream pies that need a baked crust, bake at 325°F until golden brown.

Yum, these are good!

Cinnamon Swirl Muffins

  • 2 1/2 c. almond flour
  • 1 Tbsp. coconut flour
  • 1 tsp. ground cinnamon
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 2 eggs
  • 1/2 c. plus 1 Tbsp. coconut milk
  • 1/2 c. honey

Topping Ingredients:

  • 2 Tbsp. honey
    1 Tbsp. ground cinnamon
    1 Tbsp. melted coconut oil

Preheat oven to 325°F.  Mix together the dry ingredients, then the wet ingredients.  Stir together until mixed.  Divide batter evenly among 12 muffin cups (greased or lined with paper).

Mix topping ingredients in a separate bowl, and drizzle over the muffins.  Bake for 20 to 25 minutes until golden brown.

Gluten-free Honey Peanut Butter Cookies

  • 1 3/4 c. almond flour
  • 1/2 tsp baking soda
  • 1 cup smooth peanut butter
  • 1/2 cup butter, room temperature
  • 1/2 cup brown sugar
  • 6 tbsp honey
  • 1 large egg
  • 1/2 tsp vanilla

Stir together almond flour and baking soda; set aside.

Mix together peanut butter and butter until smooth.  Add rest of ingredients; mix well.  Add almond flour mixture and mix again.

Drop by spoonfuls onto a cookie sheet lined with parchment paper.  Bake in a preheated 350°F oven for 11 to 13 minutes.  Cool for a minute or two before removing from cookie sheet.

Gluten-free Dairy-free Banana Waffles

  • 1 1/2 c. almond flour
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tsp. cinnamon
  • 4 large eggs, beaten
  • 2 ripe bananas, mashed
  • 1 tsp. vanilla extract
  • chopped pecans (optional)

Preheat waffle iron.  Mix dry ingredients together before adding wet ingredients (except pecans.)  Mix well with fork.

Grease waffle iron.  Drop batter onto waffle iron per waffle iron directions.  Optional - sprinkle with pecans.  Bake waffles until done, avoiding the urge to check them before they are done (it'll make a mess.)  Remove and serve.
