Crock Pot Sweet Potato Casserole

  • 2 29oz. cans or 3 lb. sweet potatoes
  • 1/4 c. butter, softened
  • 2 1/2 Tbsp. brown sugar
  • 2 Tbsp. white sugar
  • 1 Tbsp. orange juice
  • dash of salt
  • 2 eggs
  • 1 1/2 tsp. vanilla extract
  • 1/2 c. milk or canned coconut milk


  • 3/4 c. pecans, chopped
  • 2/3 c. brown sugar
  • 1/4 c. flour
  • 1 tsp. vanilla
  • 1/4 c. butter, melted

Drain and mash sweet potatoes if using canned -- bake sweet potatoes in crockpot on low for 2 to 4 hours until fork tender if not using canned...peel and mash cooked sweet potatoes.

Add rest of ingredients except topping; mix very well.  Put in greased crock pot.  Mix topping ingredients and sprinkle on top of sweet potato mixture.  Cover and cook on high for 2 1/2 to 4 hours depending how hot your crock pot cooks.  I like to remove the cover for the last 30 to 45 minutes.  Serve right in the crock.

Note:  this is easily doubled to feed more people.  It is a big hit whenever I take it to potlucks.

Low Carb Crockpot Cauliflower Soup:

1 head cauliflower - cut into small pieces, uncooked
1 green pepper - diced
1 small yellow onion - diced
1 clove minced garlic
3 1/2 cups chicken broth
3 tbsp butter
1 cup heavy whipping cream
4 slices bacon
pepper to taste
2 tsp parsley

Cook bacon on stovetop until crisp. Slice into small pieces and add all ingredients into crockpot. I took the cauliflower and put it into my ninja food processor, chopping it up really fine and taking the work of chopping out for me. This is the best part, take the grease from the bacon and add that to the crockpot as well! Cook on low for 6 hours.

This meal could also be kept in the freezer, so make extra and freeze some for later!

Slow Cooker Southwestern Beef Wraps

Recipe Prep Time: 20 mins

Cook Time: 5 hrs

Recipe Description Simplify a hectic day with the convenience of this easy slow cooker recipe that is packed with Southwestern flavor. The tender mixture of shredded beef, onion, peppers and tomatoes with chiles is rolled inside warm flour tortillas for serving.

Serves: Makes 12 (2­tortilla) servings.


1 medium onion, cut into 1­inch wedges

2 1/2 pounds boneless chuck roast, trimmed and cut into pieces

1 teaspoon McCormick® Chili Powder

1 teaspoon McCormick® Cumin, Ground

1 teaspoon McCormick® Garlic Powder

3/4 teaspoon salt

1 green bell pepper, cut into 1/2­inch pieces

1 can (14 1/2 ounces) diced tomatoes with mild green chiles, undrained

2 tablespoons chopped fresh cilantro

24 flour tortillas, (6­inch)

Directions: Layer onion and meat in slow cooker.  Mix chili powder, cumin, garlic powder and salt in small bowl. Sprinkle seasoning mixture all over meat. Top with green pepper. Pour diced tomatoes over top. Cover.  Cook 8 hours on LOW or 5 hours on HIGH.  Remove beef from slow cooker. Shred beef with 2 forks. Drain and discard liquid from vegetable mixture in slow cooker. Return beef and vegetables to slow cooker. Stir in cilantro. To serve, use a slotted spoon to fill warm tortillas with mixture. Serve with salsa and shredded cheese, if desired.

We're having this tonight.  It's good, but I cooked the breasts whole and cut them up after time I'll cut them up before cooking (it's easier and they will look better)

Here is one I would like to share. I did NOT make it up myself. I saw it on Facebook and I tried it the other day and it was a hit! It is VERY simple.

Beef Roast

1 beef roast (any kind)

1 envelope Hidden Valley Ranch Dressing Mix

1 envelope Au Jus Mix

2 Pepperoncinis

1 Stick Butter

All you do is put the roast in the crock pot, sprinkle the ranch and au jus mix over the roast, place the pepperoncinis and butter on top. You add NO water or liquid. Cover and cook on low for 8 hours.

I did not use pepperoncinis. I started the roast at 11:30 am. I used a tri-tip roast. I had it on High just to melt the butter. After it melted, i turned it to Low. It was ready by 5:00 pm. It was SO good!!! And the meat was VERY tender. I had to add a 2nd stick of butter, and some may think the "sauce" is salty, but for me and my family they want me to make it again!
