Saucy Italian-style Chicken Thighs (Crock Pot)

Nutrition Info
  • Calories: 218.1
  • Fat: 5.8g
  • Carbohydrates: 10.5g
  • Protein: 28.8g

Ingredients

Chicken Thigh, 12 thigh, bone and skin removed
Diced Tomato, 14.5 oz
Tomato Paste, 6 oz can
Onions, raw, 1 cup, chopped
Garlic Minced, 1T
Italian Seasoning, 1T

Directions

Arrange chicken in a 4 quart or larger slow cooker. In a medium bowl, combine all remaining ingredients. Pour over chicken. Cover and cook on High for 1 hour, reduce heat to low and cook 4-5 hours, or until chicken is tender.

Serves 6 (serving size: 2 thighs)

Do you cook the beef on stove top first?

Yes.  The cook time isn't long enough for me to be comfortable putting raw meat in the crockpot.

We had this last night, topped with Parmesan cheese.  Even my picky eater came back for seconds!

About This Recipe

"A hearty dish for a busy day. Also good as party or potluck food. The flavors of Italian sausage, spaghetti sauce, onions, and spinach meld perfectly in the crock pot. Despite all the healthy veggies its a real guy pleaser! ;)"

Ingredients

    • 8 -10 sweet Italian sausage
    • 2 onions
    • 2 green peppers (optional) or 2 red peppers (optional)
    • 2 lbs frozen spinach
    • 1 quart spaghetti sauce ( I prefer Classico)
    • grated parmesan cheese

Directions

  1. Brown sausages in skillet or on grill.
  2. Peel and slice onions. Put in bottom of 6qt crock pot.
  3. If using peppers, seed and slice vertically. Layer on top of the onions.
  4. Pour frozen spinach into crock pot.
  5. Arrange sausages on top of the spinach.
  6. Pour spaghetti sauce evenly over top of everything.
  7. Cook on high for 2 hours then on low for 3-4 hours. OR, thaw the spinach first and cook on low for 6+ hours.
  8. Serve over pasta, over rice, or with a hearty, crusty, bread. Pass grated Parmesan at the table.
  9. Note -- If preparing for a party or a potluck you may wish to slice the sausage and make 2 layers of ingredients to better control the portions. This version could have shredded mozzarella incorporated into the layers and on top.

Cheesy Ranch Bacon Potatoes

  • 2 1/2 - 3 lb. potatoes, washed and cubed (1 1/2" - 2" cubes)
  • 1 large onion, cut into wedges
  • 10 oz. can Campbells Fiesta Nacho Cheese soup
  • 8 oz. sour cream
  • 1 pkg dry ranch dressing mix (or use 1 Tbsp of my homemade mix)
  • 1/2 c. bacon, cooked & crumbled

Place potatoes and onion in crockpot.  Combine soup, sour cream, ranch dressing mix...stir well.  Pour over potatoes.  Cover and cook on low for 6 to 7 hours.  Top with bacon before serving.

 Here is a good recipe.  I made it tonight for dinner.

Cranberry Chicken

Ingredients
4 skinless, boneless chickenbreast halves
1 (16 ounce) bottle Catalina salad dressing
1 (14.5 ounce) can whole berry cranberry sauce
1 envelope onion soup mix
Directions
Place the chicken breasts in the bottom of a slow cooker. Pour the salad dressing, cranberry sauce, and onion soup mix over the chicken.
Cook on Low 4 to 6 hours.

It’s magic! A rich hot fudge sauce forms while the cake bakes. Yum!

  cup Gold Medal® all-purpose flour
1/2 
cup granulated sugar
tablespoons baking cocoa
teaspoons baking powder

teaspoon vanilla

  cup chopped nuts

  cup packed brown sugar
1/4
  cup baking cocoa
1 1/2
  cups hot water
  1. Spray inside of 2- to 3 1/2-quart slow cooker with cooking spray. Mix flour, granulated sugar, 2 tablespoons cocoa, the baking powder and salt in medium bowl. Stir in milk, oil and vanilla until smooth. Stir in nuts. Spread batter evenly in slow cooker.
  2. Mix brown sugar and 1/4 cup cocoa in small bowl. Stir in hot water until smooth. Pour evenly over batter in slow cooker.
  3. Cover and cook on high heat setting 2 hours to 2 hours 30 minutes or until toothpick inserted in center comes out clean.
  4. Turn off slow cooker. Let cake stand uncovered 30 to 40 minutes to cool slightly before serving. Spoon warm cake into dessert dishes. Spoon sauce over top.

    Note: This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base. For slow cookers with just a heated base, follow the manufacturer’s directions for layering ingredients and choosing a temperature.
