Cooking Charts
The following chart refers to cooking times for most of meat and vegetables we could think of. When the chart refers to Power & Time 1 and Power & Time 2, an adjustment will be required in the setting of the microwave halfway through the cooking. Simply cook for Power & Time 1, adjust the microwave power setting as required and cook for Power & Time 2.

All foods should be stirred or turned as appropriate halfway through cooking.

All times quoted are for a 850W oven.
For 650W add 15 seconds per min.
For 700W add 10 seconds per min.
For 1000W subtract 10 seconds per min.

How to Cook Pasta

1 quart hot tap water

1 tsp. salt

8 oz. manicotti shells, lasagna noodles, spaghetti, macaroni, or noodles

Combine water and salt in a microwave safe dish.  For manicotti shells or lasagna, use a 9 x 13 baking dish; for macaroni or noodles use a casserole dish; for spaghetti use a casserole dish or large glass measuring cup.  Cover with a glass lid or plastic wrap.  Heat in microwave oven to boiling, usually 8 to 10 minutes on high.

Remove cover and add pasta, stirring to ensure all pasta is covered by water.  Cover again and cook another 6 to 10 minutes at medium or until tender.  Drain.

Taco Casserole


  • 1 lb. ground beef
  • 1 pkg. Taco seasoning
  • 3/4 c. water
  • 1 can (15 oz.) refried beans
  • 2 c. shredded lettuce
  • 1/4 c. chopped onion
  • 1 Tbsp. chopped green chilies (optional)
  • 1 c. shredded Cheddar cheese
  • Nacho flavored tortilla chips
  • chopped tomato
  • sliced ripe olives
  • sour cream
  • taco sauce

Put meat into a 2-quart casserole dish.   Cover with waxed paper.  Cook in microwave oven 4 minutes on high or until meat is no longer pink;  stir and break meat apart with a wooden spoon once during cooking.  Drain fat.

Mix taco seasoning mix and water and add to ground beef; stir.  Cover with waxed paper.  Cook in microwave oven 5 minutes on Medium; stir once.

Lightly grease bottom of a 2 1/2 quart microwave safe baking dish.  Spread refried beans evenly over the bottom.  Sprinkle with shredded lettuce, onion and chilies; top with ground beef mixture.  Cover with waxed paper.

Cook for 3 1/2 minutes at Medium-High, or until bottom of casserole feels warm; rotate casserole one-half turn once during cooking period.  Sprinkle cheese on top.  Cook 3 more minutes at Medium-High until cheese melts. 

Top with tortilla chips and serve with tomatoes, olives, sour cream, and taco sauce.

Stuffed Meatloaf


  • 1 1/2 lb. ground beef
  • 1/2 c. dry bread crumbs
  • 1 egg
  • 3/4 c. milk
  • 1/4 c. finely chopped onion
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbsp. butter
  • 1/4 c. chopped celery
  • 1/4 c. chopped red pepper
  • 1/4 c. chopped green pepper
  • 1/4 c. shredded Cheddar cheese
  • 1/2 c. ketchup

Mix ground beef, bread crumbs, egg, milk, onion, salt and pepper in a bowl.  Pack 1/2 of the mixture lightly into a glass loaf dish.  Make a depression in the center of the meatloaf.

Put butter and vegetables into a 1 quart glass dish.  Cook uncovered in microwave oven 2 minutes at high, or until vegetables are tender; stir once.  Stir in cheese.  Put vegetable mixture in depression of meat mixture.  Place remaining meat mixture on top, pressing edges to seal.  Cover with waxed paper.

Cook in microwave oven 10 minutes at Medium-High.  Top with ketchup.  Rotate dish one half turn.  Cook covered 15 minutes at medium-high. 

Remove from oven, cover with aluminum foil and let stand for 5 minutes.

6 servings.

Pork with Chinese Vegetables (good use for leftover pork chops)


16 oz. can Chinese vegetable, rinsed and drained

1 1/2 c. 3/4 inch cubes cooked pork

1 1/2 c. pork or beef gravy

1 c. 1/4 diagonal slicies celery (about 2 medium stalks)

4 oz. can sliced mushrooms, drained

2 oz. jar sliced pimento, drained

2 tsp. soy sauce

chow mein noodles

Mix all ingredients in 2 quart casserole.  Cover tightly and microwave on high (100%) for 5 minutes; stir.  Cover and microwave until hot and bubbly, 5 to 7 minutes longer.  Serve over chow mein noodles.

Mexican Cheese Turkey Meatballs

1 pound ground beef or turkey
1 envelope taco seasoning
1 egg
8 ounces Mexican Velveeta cheese (cubed)
1 small package nacho chips

Instructions
Combine ground meat, taco seasoning and egg. Form into 1 inch meatballs. Microwave on paper plate on high for about 10 minutes or until brown. Arrange nacho chips on bottom and around sides of glass pie plate. Melt cheese in microwave on high for about 1 minute; stir and microwave 1 minute more. Pour cheese over chips and arrange meatballs on top of cheese.

Sukiyaki

  • 2 lb. beef tenderloin
  • 1/2 c. soy sauce
  • 1/4 c. sherry or sake
  • 1/4 c. sugar
  • 2 medium onions, peeled and sliced
  • 8 oz. can mushroom stems & pieces, drained
  • 5 green onions, diagonally sliced
  • 1/2 lb. spinach leaves, washed, drained and sliced
  • 19 oz. can bean sprouts, drained and rinsed
  • 8 oz. can bamboo shoots, drained and sliced
  • 5 oz. can water chestnuts, drained and sliced
  • cooked rice

Cut beef across the grain into 3/4 inch strips.  Put meat into a 3 quart glass casserole.  Mix soy sauce, sherry and sugar; pour over meat.  Set aside to marinate for 30 minutes.

Put sliced onion over meat.  Cover with waxed paper.  Cook in microwave oven 5 minutes at high, stirring 3 times.

Push meat into center of casserole.  Put the remaining vegetables into casserole in separate piles around the edges.  Spoon some of the marinade in casserole over each vegetable.  Cook covered in microwave oven 6 minutes at high, rotating casserole dish 1/2 turn once if you don't have a turntable in your oven.

Serve with hot cooked rice.

6 to 8 servings

Pizza Burgers


1 lb. ground beef

8 oz. tomato sauce

1/2 c. dry bread crumbs

1/2 tsp. oregano

1/4 tsp. salt (optional)

Monterey jack, cheddar, or colby jack cheese

6 hamburger buns (toasted if desired)

Reserve 1/2 c. tomato sauce.  Mix ground beef, rest of tomato sauce, bread crumbs, oregano, and salt together.  Form 6 patties.  Place in a microwave safe roasting rack or in a microwave safe glass dish.  Spoon rest of tomato sauce on top of patties.  Cook on 100% power for 5 minutes in microwave oven.   Rotate dish 1/2 turn.  Cook for another 4 to 7 minutes, until edges of patties are firm and patties are browned.  Top with cheese.  Cook another minute or until cheese is melted.  Serve on buns.

After cooking (look at all the grease!)

Asparagus & Ham Strata

Puffy and soufflelike, this casserole goes together a day ahead, then waits overnight in the refrigerator until you’re ready to cook and serve it.

3/4 pound asparagus

2 tablespoons water

2 tablespoons butter or margarine, at room temperature

4 slices firm-textured white bread

1 3/4 cups (7 oz.) shredded Cheddar cheese

1 cup diced cooked ham

4 large eggS

1 1/2 tablespoons instant minced onion

1/2 teaspoon each dry mustard and Worcestershire

1/2 teaspoon each garlic powder and ground red pepper (cayenne)

1 1/2 cups half-and-half

Snap off and discard tough ends of asparagus, then cut stalks into 1-inch pieces and place in a 9-inch square microwave-safe baking dish. Add water; cover and microwave on HIGH (100%) for 5 minutes, stirring after 2 minutes to bring outside pieces to center. Drain asparagus and set aside.

Wipe baking dish dry, then evenly coat bottom and sides with 1 1/2 teaspoons of the butter. Spread remaining 1 1/2 tablespoons butter over both sides of bread slices. Arrange bread in an even layer in baking dish; top evenly with 1 1/4 cups of the cheese, then with ham and asparagus.

In a small bowl, beat eggs until blended. Mix in onion, mustard, Worcestershire, garlic powder, red pepper, and half-and-half. Pour egg mixture evenly over layered ingredients in baking dish. Cover and refrigerate for at least 8 hours or until next day.

To cook, microwave, uncovered, on MEDIUM-HIGH (70-80%) for 10 minutes, giving dish a half-turn after 5 minutes. Then microwave on HIGH (100%) for 3 minutes; give dish a half-turn and evenly sprinkle strata with remaining 1/2 cup cheese. Microwave, uncovered, on HIGH (100%) for 3 more minutes. Let stand, uncovered, for 10 minutes; strata should feel firm in center when lightly touched. To serve, cut into squares. Makes about 6 servings.

Per serving: 383 calories, 22 g protein, 13 g carbohydrates, 27 g total fat, 221 mg cholesterol, 754 mg sodium

Traditional Irish Stew

2 lbs. lamb, cut for stew

1 pkg. brown gravy mix (with mushrooms if you can find it)

1 cup water

4 medium potatoes, peeled & cubed

4 medium onions, quartered

Place lamb in 3 quart microwaveable casserole dish. Stir gravy mix into water. Pour over lamb. Cover with and cook on 70% power for 50 min, stirring once during cooking time. Stir in vegetables till well coated with gravy. Cover and cook on 50%, 40 to 50 min, or till vegetables and lamb are tender. Let stand 5 min before serving.

Serves 4 to 6.
