Sweet & Sour Meatballs


  • 1/2 c. brown sugar
  • 1 Tbsp. cornstarch
  • 1 1/2 c. pineapple tidbits or chunks (with syrup)
  • 1/3 c. white vinegar
  • 1 Tbsp. soy sauce
  • 1 small green pepper, cut into chunks

Prepare and microwave meatballs. 

Mix brown sugar and cornstarch in 2 quart casserole.  Stir in pineapple with syrup, vinegar, and soy sauce.  Microwave uncovered on high for 2 minutes; stir.  Microwave until mixture thickens and boils, 3 to 4 minutes longer.

Add cooked meatballs and green pepper.  Cover tightly and microwave on high until pepper is crisp-tender, about 3 to 4 minutes.

Chicken & Stuffing Casserole

This is one my family enjoys!


  • 1/3 c. margarine or butter
  • 1 box chicken flavor stuffing mix
  • 1/4 c. water
  • 1 10 oz can cream of mushroom soup
  • 1 10 pkg. frozen peas
  • 1/3 c. milk
  • 2 tsp. instant minced onion
  • 2 c. coarsely cut-up cooked chicken or turkey

Melt margarine in baking dish in microwave. Add stuffing and water, toss to coat. Remove 1 cup stuffing mix and spread remaining mix evenly in dish. Mix rest of ingredients in another bowl and microwave on high for 3 minutes; stir; cover and microwave another 3 minutes until hot. Pour over top of stuffing in baking dish; top with rest of stuffing. You can also sprinkle with a bit of cheese if you like. Microwave uncovered on high for another 7 to 9 minutes.

Lasagna


1 1/2 tsp. vegetable oil or olive oil

1/2 lb. ground beef or turkey

1/2 c. grated Parmesan or Romano cheese

1 egg, slightly beaten

2 cups ricotta cheese

2 tsp. dried parsley flakes

1 32 oz. jar spaghetti sauce (about 3 1/2 cups)

6 uncooked lasagna noodles

1 1/2 c. shredded mozzarella cheese

2 Tbsp. grated Parmesan or Romano cheese

Put olive oil and ground beef into a 9 inch glass pie plate.  Cover with waxed paper.  Cook in microwave for 2 minutes on high, or until meat is no longer pink.  Stir and break meat apart with wooden spoon once during cooking.  Drain off fat.

Combine 1/2 c. Parmesan cheese, egg, ricotta cheese and parsley.

Pour 1 c. spaghetti sauce over bottom of a 1 1/2 quart glass baking dish (rectangular).  Put 2 lasagna noodles on sauce (break noodles to fit dish if necessary).  Layer with 1/2 each of the Mozzarella cheese, cooked beef, and Parmesan cheese mixture.  Repeat.  Put remaining noodles over cheese mixture.  Spread remaining sauce on top.  Cover with waxed paper. 

Cook in microwave oven for 15 minutes at high; rotate dish one-quarter turn.  Cook, covered, another 20 minutes on medium, or until noodles are done.

Remove dish from microwave; cover with aluminum foil and let stand 20 minutes.  Before serving, sprinkle 2 Tbsp. Parmesan cheese on top.
