Cranberry sauce and brown sugar create a tangy glaze for moist meatballs that are good as an appetizer or as a main dish over rice. "We love them so much, I prepare them year-round," says Joyce Bentley of Redlands, California.

This recipe is:

  • 2 eggs
  • 1 envelope onion soup mix
  • 1/2 cup seasoned bread crumbs
  • 1/4 cup chopped dried cranberries
  • 2 tablespoons minced fresh parsley
  • 1-1/2 pounds lean ground beef

  • SAUCE:
  • 1 can (14 ounces) whole-berry cranberry sauce
  • 3/4 cup ketchup
  • 1/2 cup beef broth
  • 3 tablespoons brown sugar
  • 3 tablespoons finely chopped onion
  • 2 teaspoons cider vinegar


  • In a bowl, combine eggs, soup mix, bread crumbs, cranberries and parsley. Crumble beef over mixture and mix well. Shape into 1-in. balls; place 12 to 14 balls on a microwave-safe plate. Cover with waxed paper; microwave on high for 2-3 minutes or until no longer pink. Remove to paper towels to drain. Repeat with remaining meatballs.
  • In a 2-qt. microwave-safe dish, combine sauce ingredients. Cover and microwave on high for 3-4 minutes or until heated through, rotating once. Gently stir in meatballs. Cover and cook on high for 1-2 minutes or until heated through. Yield: about 3 dozen.

Nutrition Facts: 1 serving (3 each) equals 215 calories, 6 g fat (2 g saturated fat), 70 mg cholesterol, 534 mg sodium, 29 g carbohydrate, 1 g fiber, 13 g protein.

  • 3 c. dry red wine
  • 2 c. apple juice
  • 1/4 to 1/3 c. packed brown sugar
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. ground ginger
  • 10 whole cloves
  • apple wedges

Mix all ingredients except apple wedges in 2 quart measure.  Cover tightly and microwave on high 5 minutes; stir.  Cover and microwave to boiling, 6 to 8 minutes longer.  Garnish each serving with apple wedge.

Spinach Artichoke Dip

Preparation Time: 10 minutes
Microwave Time:
4 to 8 minutes

2 cups (loosely poured) fresh, washed spinach
2 cloves garlic, peeled and minced
1 teaspoon lemon juice
2 tablespoons water
dash salt and pepper
1/2 cup sour cream
1/2 cup cream of mushroom soup 
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1 (14 ounce) can artichoke hearts, chopped 

Combine spinach, water, lemon juice, garlic, salt and pepper into a microwave-safe bowl. Cover loosely with microwave-safe platstic wrap and microwave on high for 1 to 3 minutes, until spinach is wilted.  If there is a lot of excess water around the spinach at this point, drain it off. 

Then, add the sour cream, mushroom soup, both cheeses, and the artichoke hearts to the spinach and garlic mixture.  Mix thoroughly.  Microwave on high for 3 to 5 minutes, stirring after about 2 minutes, until dip is heated all the way through. 

If desired, shred some additional mozzarella cheese on top, and return to microwave for 30 seconds until melted.  Serve with bread, pita chips, or tortilla chips for a party-pleasing appetizer!

Hawaiian Pizza Dip

Hawaiian Pizza Dip

Preparation Time: 10 minutes
Microwave Time:
4 to 6 minutes

1 eight oz package cream cheese, softened
1 cup canned pizza sauce
1 teaspoon Italian seasoning
1 can diced pineapple, drained
1/2 cup Canadian bacon or ham, chopped into bite-size pieces
1/4 cup red onion, chopped
1 cup shredded mozzarella cheese
1/2 cup freshly grated parmesan cheese
1 large bag plain bagel chips

In a microwave-safe bowl, mix together the cream cheese, pizza sauce and Italian seasoning.  Microwave on high for 2 to 3 minutes until warm.  Smooth the mixture evenly in the bottom of the bowl (to create an even layer), and then top with ham, pineapple, onion and both cheeses.  Microwave on high for another 2 to 3 minutes, until dip is hot, and cheese is fully melted.  Serve with bagel chips for your own hawaiian pizza bagel bites!

1 (14 oz.) can artichoke hearts, drained and finely chopped
1 cup mayonnaise
1 cup grated Parmesan cheese
1/8 teaspoon garlic salt

How to make Artichoke Dip

In 8-inch square glass baking dish, mix chopped artichokes with mayonnaise, Parmesan cheese and garlic salt.
Sprinkle with paprika.
Microwave at HIGH (10) 3 to 5 minutes, until heated through; stir after 2 minutes.

Hummus with Warm Pita Bread

Preparation Time: 5 minutes
Microwave Time:
5 minutes

1 can of chick peas, drained (garbanzo beans)
3 cloves of garlic, peeled 
1 tablespoon olive oil
2 teaspoons lemon juice
1 teaspoon salt
1 tablespoon tahini
1 package pita bread

Add the 3 cloves of peeled garlic to a food processor, and process until garlic is finely minced.  Open and drain the can of chick peas, and add those to the garlic.  Then, add in the tahini, lemon juice, olive oil, and salt.  Process these ingredients well, so it forms a thick paste.  Finally, turn the processor on, and slowly add water until the hummus thins out to a nice spread.  Pour the hummus into a serving bowl or platter and drizzle with a little extra olive oil, and sprinkle with paprika.

Cut about 4 pieces of pita bread into triangles.  Place on a microwave-safe plate and microwave for 1 minute, until bread is soft and warm.  Dip in the hummus, and enjoy!

Chili Cheese Meatballs

  • Basic meatballs (recipe under Meats/Main Dishes post)
  • 8 oz. Velveeta, cut up
  • 1 small tomato, chopped
  • 1 Tbsp. chopped green chilies

Prepare basic meatballs except shape mixture into 1 inch balls before cooking. 

Place cheese in 1 quart casserole.  Mcrowave uncovered on high until melted, 1 to 2 minutes; stir. 

Add in tomato and chilies.  Microwave until tomato is hot, another 1 to 2 minutes. 

Transfer meatballs to serving dish; serve with cheese mixture and toothpicks.

Party Mix

  • 2 cups bite-size crispy corn squares
  • 2 cups bite-size crispy rice squares
  • 2 cups bite-size crispy wheat squares
  • 1 cup salted peanuts
  • 1 cup thin pretzel sticks
  • 1/2cup butter, melted
  • 2 tablespoons Worcestershire sauce  
  • 1/4 teaspoon garlic powder

How to make Party Mix

In 2-quart oblong glass baking dish, combine corn squares, rice squares, wheat squares, peanuts and pretzel sucks; set aside.
In 2-cup glass measure, blend melted butter, Worcestershire sauce and garlic powder.
Pour butter mixture over cereals; stir until well coated.
Microwave at HIGH (10) 4 to 7 minutes until butter is absorbed and mixture is crispy, stirring every 2 minutes.
Cool before serving.

Cocktail Reubens

  • 36 slices cocktail rye bread, toasted
  •  1/2cup Thousand Island dressing
  •  1 (8 oz.) can sauerkraut, rinsed and drained
  •  1/4 lb. thinly-sliced corned beef  
  • 1 (6 oz.) pkg. Swiss cheese slices, each slice cut into 4 squares

How to make Cocktail Reubens

Arrange 9 slices of bread on paper towel lined plate.
Spread each slice with about 1/2 teaspoon Thousand Island dressing.
Add small amount of sauerkraut and corned beef to each slice.
Top each with 1 square Swiss cheese.
Microwave at MEDIUM HIGH (7) 2 to 3 minutes until cheese melts.
Repeat with remaining ingredients.
