I saw the most creative idea for a backsplash that I would try for sure on HGTV. Color correction was the name of the show I think. Anyway they took the appropriate length of wonderboard/cement board cut to fit the backsplash area and used tiles that they broke under a tarp. The put tile adheisive on the board and fit the broken pieces in a pleasing pattern, sort of a mosaic look,  then grouted it with a dark black grout (you could use any color of grout but the black was awesome). When it had set up they took it into the kitchen and used liquid nails to adhere it to the backsplash area.
It was great looking.

I wish I had photos to show you, but I also had the tuscan themed kitchen with the stainless steel appliances.  When we redid the counters,  it is in a marbled look, with the black, and tones of beige/browns and whites splattered look.  Maybe go with a simple color of tiles to put on the backsplash, something that if you change your decor, the backsplash wont have to be replaced.
If you are more daring,  put up washable wallpaper, and paint it the same color as your walls.  Yet, the type I am thinking of, has a almost embossed look to the white wallpaper.  It is supposed to be painted,  so that might work, and is again washable.  We did have white tiles on our backsplash, and kept it up. As the counters do have some white mixed in with the other blacks, and brown tones,  and I had a tuscan reddish paint on the walls, till recently, I repainted the kitchen still with the tuscan theme, and in a more of a lighter cream/yellow, with the look of the color sort of changes thru out the day, sometimes it appears more cream, and other times it has a more light rust tone to it.  I will have to see if I have any photos of it,  We have hardwood floors in our kitchen, and I  really didn't want the stainless steel appliances,  due to I see that it is a trend in kitchen decor, just like all the other colors from the past.  But DH won,  and he got all new appliances, even though there was nothing wrong with the ones we had.  lol

Here is sudster40plus again, I found some photos that show the tuscan toned walls, the counter, with the wood floor, and the white backsplash. I will try to add these to this post, or will make another post w additional photos.
Good luck,  let us know what you end up doing...
