1/2 C chopped onion
2 minced garlic cloves
1 1/2 C mixed veggies (such as squash, zucchini, peppers, portobello mushrooms, and corn, diced)
3 teaspoons olive oil
2 cans drained black beans (I use about 3 cups of cooked dried beans since I don't use canned foods)
1 large egg
1 cup whole wheat breadcrumbs
1/4 teaspoon salt
1 teaspoon pepper
1 teaspoon chili powder
6 whole wheat sandwich buns
1. Saute onion, garlic, and veggies in 1teaspoon of the oil.
2. Combine veggies, beans, egg, breadcrumbs, salt, pepper, & chili powder with mixer (kitchenaid is wonderful). Blend til some of the beans are broken and mixture begins to hold together. Form 6 patties.
3. Saute the patties in remaining oil until browned, approx 2-3 min. Serve on buns.
