I make a spaghetti sauce that's easy and very hearty.

1 lb ground beef/turkey/chicken (I prefer turkey)
2 cans fire roasted diced tomatoes.
1 small can tomato paste.
Chopped onion

Veggies: Zucchini, mushroms.

Spices: salt, pepper, smoked paprika, dillweed, garlic powder, chili powder, basil, and brown sugar

Cook up your meat in the skillet, drain fat. Add tomato paste, two cans of diced tomatoes, let heat over medium heat and mix together well.

In a seperate pan, sautee diced zucchini and mushrooms together in some butter with a little salt, pepper, and garlic.

When your sauce is all mixed together, season to taste with the above spices. Add just a little bit of brown sugar at a time and mix each time and taste: The sugar neutralizes the acidity of the tomatoes, so it's a bit more palatable. But you don't want too much, nobody wants sweet spaghetti!

Oh and I guess boil some noodles, lol.

When your sauce is done, add your zucchini/mushroom medley to it and enjoy!

15 Minute Parmesan Butter Pasta w/ Tomatoes

Ingredients:
Your favorite pasta (16oz)
One 12 oz can diced tomatoes (or fresh)
1/2 stick of butter
3/4 cup grated parmesan
Tablespoon garlic

Directions:
Cook pasta as directed. Drain. Melt butter in large sauce pan. Add garlic and drained tomatoes. Stir. Add drained pasta. Stir. Add parmesan. Stir.

Enjoy! (You can easily add sausage to this.) I really like using angel hair pasta, but anything works.
