Question about corn

If you were to serve corn on the cob with dinner, would you consider that enough of a vegetable? Or would you also have salad or some other vegetables? Hubs and I were discussing this the other night. We have salad 95% of the time with dinner. He asked why we had to have salad if we're having corn, I said because corn doesn't count. When he asked why, I said "because it doesn't".

I'm with you. I need something green with it. And I like your response.

Corn is a grainy vegetable. Contains starch. So its perfectly acceptable to serve "real" vegetables with it.

I try to balance the day, not the meal.. So on a day we were having corn for dinner I'd be sure that the other meals were a little more heavy on the fruits and veggies and call the corn 'veggies'.

Whaaa?

You have got to mix it up a bit. What about tomatoes drenched in olive oil, salt and pepper, and loads of chopped basil.. no appeal?

you need to branch out!!!

Corn and potatos don't count as vegetables, as I continually tell DH. They are grains and tubers!

Tomatoes are effing disgusting, but just about anything else either dip it in ranch or cook it and dip it in butter. BOOM healthy fats AND micronutrients!

Corn is a grain/starch so I would add something green to the plate to round the meal out.

Corn, to me, is in the same category as rice.

:/ I don't like ranch, or mustard, or mayo, or pickles, or nothing really...I'm very very picky and have been for as long as I can remember. It's a mind over matter issue...like I can chew carrots, but I can't swallow it :(
