zucchini pie!

zucchini grow like crazy i love to cook with them but i know a lot of people do not know what you can make with them i love to make pies there is one type of zicchini pie that i use to make offten it tasted just like pumpkin pie!  but i thought i would post a few diffrent ones here for ya'll in replies so they don't run into gether in the mine post :) enjoy i found a few i cannot wait to make!

know my grammar is poor and so is my spelling and sometimes my wording
is odd please understand i have severe dyslexia i do run spell check but
it dose not always fine all my mess up when i misuse a word pointing
out my  mess ups is fine with me and i will be more then happy to fix
them however rude comments will not get them fix thank you for
understand:)

Zucchini pie with bacon
Call it quiche or pie - either way you'll love the combination of shredded zucchini, smoky bacon and green onions in a cheesy custard base.
Ingredients
  • 1 9-inch single pie crust (store-bought or homemade)
  • 2 cups zucchini, shredded
  • 1 bunch green onions, chopped
  • 4 slices thick-cut cooked bacon, crumbled
  • 1 cup shredded mozzarella cheese
  • 3 eggs
  • 1/2 cup half-and-half
  • 1/2 tsp salt
  • freshly ground pepper
Instructions
Preheat the oven to 375 degrees. Lay the pie crust into a 9-inch pie plate and trim the excess. Put the pie plate on a foil-lined baking sheet.In a large bowl, mix together the zucchini, green onions, bacon and cheese.In a small bowl or Pyrex measuring cup, mix together the eggs, half-and-half, salt and pepper. Pour the egg mixture into the bowl with the zucchini and mix well.Pour the zucchini mixture into the prepared pie crust. Bake about 50 minutes, or until the middle of the pie is set and the top is nicely browned. Let cool to room temperature before serving.

easy zucchini pie


Ingredients
1
cup chopped zucchini
1
cup chopped tomato
1/2
cup chopped onion
1/3
cup grated Parmesan cheese
2/3
cup Bisquick Heart Smart® mix
3/4
cup fat-free (skim) milk
2
eggs or 1/2 cup fat-free cholesterol-free egg product
1/2
teaspoon salt
1/4
teaspoon pepper
  • 1 Heat oven to 400°F. Lightly grease bottom and side of pie plate, 9x1 1/4 inches.
  • 2 Sprinkle zucchini, tomato, onion and cheese evenly in pie plate.
  • 3 Stir together remaining ingredients with fork until blended. Pour evenly into pie plate.
  • 4 Bake about 35 minutes or until knife inserted in center comes out clean. Cool at least 10 minutes.

zucchini pie

Ingredients

  • 3 cups zucchini, diced
  • 1 onion, chopped
  • 4 eggs, beaten
  • 1 cup buttermilk baking mix
  • 1/2 cup vegetable oil
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon dried marjoram
  • 1 teaspoon chopped fresh parsley
  • ground black pepper to taste

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 10x6 inch pan or a 12 inch pie plate.
  2. In a medium mixing bowl, combine zucchini, onion, eggs, buttermilk baking mix, vegetable oil, Parmesan cheese, marjoram, parsley and pepper; mix well. Spread into the prepared baking dish.
  3. Bake for 30 minutes, or until lightly brown.

Thanks for posting these. I've never heard of these before and we always end up with a ton of zucchini.
