Did you know you can steam food right in your oven? I didn't until last week! I just learned about this technique from a friend. I was at her house for a potluck and was mesmerized by the wonderful eggplant she was serving. No joke. This stuff was good. Here's how she made it:
She cleaned and cut eggplant into rounds and layered them in a bread pan with salt, pepper, and olive oil. She placed the bread pan into a baking pan that was filled with a bit of water and covered the whole contraption tightly with tin foil. She baked it at 375 degrees for 30 minutes and when the food was taken out of the oven, she had perfectly steamed eggplant. She served the dish with shredded mozzarella, fresh chopped tomatoes, garlic and basil. It was so light and fresh!
You can use the same method to steam just about anything in your oven, including salmon, chicken and other veggies. It's a great go to method anytime of the year.
