1 egg for every 1/2 cup flour - hand mix - then knead until smooth.  Roll as thin as possible - cut thin strips with pizza cutter - boil for about 2 min!   Turned out AWESOME!

We did this for my daughter's 10th birthday, the kids had a blast!  We did it at a place called Young Chef's Academy.  That was two years ago!!

I found a great recipe for pasta dough that I tried for the first time today. 2 cups Flour, 2 Eggs, 3 tbsp Water, and 1/4 tbsp of Extra Virgin Olive Oil. It mixes and kneads really well and doesn't come out sticky which is a huge plus if you are using a pasta roller or KitchenAid Stand Mixer attachment.

I helped some one make noodles a few years ago, the way she did it was WAY more complicated than what you did

How cool. I haven't braved noodles yet though I've always wanted to try. I would love to make raviolis.
