okay ...let me go get it...i think it is in my car from my grocery shopping trip
3lbs cut up chicken
1/2 tsp salt
1/2 tsp paprika
1/4 tsp pepper
6 Tbsp butter
1/4 lb mushrooms (large pieces)
1 (12 to 15 oz) can artichoke hearts
2 Tbsp flour
2/3 cup chicken broth
3 Tbsp sherry
Salt, pepper and paprika chicken. brown in butter and put in casserole. Put 2 tablespoons butter in frying pan and sautee mushrooms 5 minutes. Sprinkle flour over mushrooms. Stir in broth and sherry and cook 5 minutes. Arrange artichoke hearts between pieces of chicken. Pour sauce over chicken and bake at 375 for 40 minutes.
just made it....its in the oven right now. looks very meditteranian and light. I cut back on the amount of butter so it should be fairly low cal
it was very good. it tasted very lemony from the marinade from the artichokes. If you don't want the taste of the marinade, then get the frozen artichoke hearts which are plain. There is a nice glaze that forms when you are cooking the sherry and broth because of the flour added earlier. ENJOY
