Do you make meals ahead and freeze them? Or make extra of a meal to freeze? Any good tips or recipes?

Usually just with crock pot meals.  I have a large crock pot, and I like to fill it up when I'm using it for a meal.  I can typically get 2-3 meals at least out of one use.

Pasta dishes like spaghetti and meatballs, baked ziti, chicken parmesean, etc always make such large portions that it's enough to feed us for two nights or more so I will usually freeze what is left after we eat and then that way I build up a collection of ready-made dinners to use when I forget to meal plan or get home late from work. :)
