Is it possible? Sure it is!
Parchment paper is a wonderful item. It seals in flavor, keeps in moisture, and makes sticky and hard to clean pots a thing of the past. Parchment paper is non stick, porous and heat resistant, which makes it an absolute necessity when it comes to baking while camping. Using parchment paper also means that you use less fat.
What's that you say? You've never baked while camping?
Well, then, you haven't lived.
One of my very favorite desserts to make while camping - besides s'mores, of course! - is dump cake. When packing for your trip, grab your favorite flavor of cake mix, a can of pie filling and hide a stick of butter down in the ice of your cooler. When you have a good set of coals, that is, not a raging fire - line your 8x8 baking pan with parchment paper. Dump the pie filling into the pan and then dump the dry cake mix over it. Spread it around evenly, and dot with the stick of butter. Cover the pan with foil and set it inside the coals to bake about 20 minutes. Check for doneness, and then remove from coals when no longer gooey. Flip the pan over onto a plate, peel away the parchment paper, and Voila!
You have a delicious dessert wtih almost no clean up. Try vanilla cake mix with blueberry pie filling, or chocolate cake mix with cherries. Lemon cake mix is delicious with blueberries, and strawberry cake mix with strawberry filling is scrumptious.
What do you like to bake when you are camping? Have you ever used parchment paper on a camping trip?
