
Grilling can be an amazing thing. For my family, it's a time to spend some extra hours outdoors, and get a break from the kitchen. We love corn on the cob, and like to take advantage of the food though out the season - while it's fresh, crisp and sweet.
As we've mentioned in this blog before, it's a great idea to wrap your corn tightly in tin foil before cooking on the grill. This ensures even cooking and tender kernels.
Here's how you can make your corn spicy and smokey with a Cuban twist.
Husk corn and remove silk.
Wash and pat dry.
Wrap each corn cob tightly and place on grill.
Cook until tender.
When done cooking, open each packet just enough to add a few more ingredients.
To each pouch add:
Garlic Butter (easy recipes available online)
Chives
Cojita Cheese (it's soft Mexican Cheese that is available with other deli items at any grocery)
Squeeze of Lime
Dash of smokey paprika
Serve piping hot along side your main dish. I recommend barbeque chicken and black beans.
Moms, how else would you dress up your cobs?
Corn with just a bit of butter, salt and pepper is so good, I'm not sure I want to spice it up, but thank you for the suggestions.
