Foil Containers for Cooking on the Grill

Foil comes in hand for so many household chores, but I find myself using it more during the summer months. There's definitely a direct correlation between how much grilling I do and how much of foil I go through.

One of my favorite cooking methods for grilling is to make foil containers or boats for slow cooking foods. The shallow foil container keeps food moist and is great for cooking more delicate meats like fish and shrimp.

Here's a recipe I tried last night. I made a few foil containers, one for each piece of halibut I was cooking. I placed the fish in the containers and drizzled each piece with olive oil, lemon and a sprinkle of sea salt. I topped the fish with tri colored peppers (green, red and yellow) and some Maui onions. I let the fish cook through and transferred each container to a cookie sheet to take into the house.

The end result was a moist and tasty dinner that was fast and easy to cook.

Moms, how else would you use this cooking method at your next barbeque?

I just bought some fish and was trying to decide how to cook it.  I may try this because it seems like it would be a great way to keep the fish moist but get it cooked through.  Thanks!
