Ember Cooking - Roasted Root Vegetables
Ember cooking is a great method for outdoor barbeques or camping trips. Simply wrap whatever you'd like to cook into tin foil, and then place directly on hot embers. My favorite thing to cook with this method is root vegetables. I like the combination of potatoes, yams, onions and carrots.
Here's how you can make these ember roasted root vegetables at your next cook out.
Wash and cut onions, yam, potatoes and carrots into chunks and divide into portion sizes.
Wrap each portion size in tin foil.
Add a dollop of butter into each before closing each foil packet.
Nestle each packet directly into the hot coals and cook until tender - about the same time as you would in an oven.
Open each pouch and sprinkle liberally with salt and pepper. Serve hot!
