This is so easy, and so delicious!
1 whole chicken about 5 lbs
Salt and pepper
3 cloves of garlic
1 large sweet onion
1 large lemon
4 tsp of corn starch
2 tsp of water
Wash the chicken inside and out, pat dry, season with salt and pepper in and out side. Place in slow cooker. Next cut up onion, to about the size of a quarter, place in slow cooker around the chicken. Take at least 3 cloves of garlic and peel and smush and place in slow cooker around chicken. ( I used about 6 to 8 cloves, we love garlic) Now cut the lemon in half and squeeze both side of lemon (making sure not to get any seeds in the chicken) When I squeeze I leave no juice in the lemons. Cook the chicken on high in slow cooker 5 to 6 hours, it depends on how fast your cooker cooks. The orginial recipe says 6 hours, but that was a little to long for me, my chicken was completely off the bones.
After the chicken is cooked take out of slow cooker. Drain the broth from the slow cooker, let sit for a few minutes, get skim the fat off the top of the broth. I put mine in the freezer for about 45 minutes, then took the fat off.
Next take an mix the corn starch and water with a wisk, mix well. Put the broth into a pot and start heating, add the corn starch and bring to a boil for a couple of minutes. Pour over the chicken.
This is out of the world good! I got the recipe from Emeril, not sure were, but it is his recipe I believe.

I found the recipe and I left out a few things that you might want to add, my husband doesn't eat vegetables so that is why I didn't remember them, I didn't cook with them.
1/4 cup of carrot
1/4 cup celery
3 sprigs fresh thyme, I didn't have any so didn't use.
you'll add these after the onions, but before the lemon juice. I haven't used these vegetables, but I would think they would be great with the chicken.
