For 4-6 people
What you need:
2 WHITE ONIONS
1 CILANTRO BUNCH
1 GARLIC CLOVE
1 CAN OF CHIPOTLE PEPPERS
CHICKEN BROTH OR BUILLON
6 CATFISH FILLETS
SEAFOOD MIX BAG
AUTHENTIC MEXICAN TORTILLA CHIPS OR TORTILLAS OR FRENCH BREAD
HUNGER FOR SPICY SOUP
4 potatoes peeled or not chop each one into 4 pieces
3 carrots peeled or not slice them as thick as you like
Boil 4 tomatoes and when soft and peeling dump them in the blender
Add a cube of chicken bullion or some chicken broth what ever chicken seasoning you have.
Add 1 garlic clove
Add 1/2 white onion peeled and chopped in half again
Finally add 2-4 chipotle peppers can be the canned type in blender and blend till all is puree
In a soup pot add oil and let it get hot as you slice a whole white onion then dump the onion in the pot and sautee the onion. Then add the puree and cook for about 5min.
Add water fill up the pot to about half. Add the carrots and potatoes and the seafood mix and cook in medium Low heat until potatoes are done.
Finally add the catfish fillets and turn up the heat and let it boil. Then move pot out of heat taste and add salt as needed.
Serve with chopped cilantro and white onion and lime wedges. Authentic Mexican tortillas chips or tortillas or French bread lightly toasted and buttered.
