Campfire Cooking Part 2 - Foil Packet Cooking
Just because you are camping doesn't mean you can't eat healthy. Foil packet cooking is the key to keeping your menu nutritious. Anything that you usually steam or bake at home can be put into a foil packet and cooked in the fire. All you need is a little olive oil, salt and pepper. Just be sure to do most of your prep work at home.
Last time we went camping, I made a delicious veggie medley. Before we left, I cleaned and sliced celery, yellow and green squash, and carrots. I also brought along some peeled garlic cloves. While we barbequed some chicken and steak, I packed up my veggie packets in heavy-duty tinfoil. I drizzled the veggies with olive oil and seasoned them. In twenty minutes we had a delicious side that even the kids loved.
