Eating light is important all year round, but it's also a good call when the temperatures continue to break records. No one wants a full belly when it's hot outside. That is why I'm a big fan of this meal - balsamic glazed salmon and farm fresh veggies.
I take the salmon steaks and slice in to four portions. I apply salt and pepper liberally along with a glaze of olive oil and fig balsamic vinegar. Then, slice yellow and green squash and add sweet white corn kernels. I put it all together into a foil pouch along with a slice of lemon and place on the grill until cooked through. I usually make about four packets for our family.
The result is perfect fish that can be served over brown rice or along with a big green salad.
