
Fall is around the corner, but the heat is definitely still upon us. This lends to more nights cooking outdoors. And who wouldn't want to continue with warm evenings cooking under the stars? But how can we start to get a taste of fall, when it still feels like summer? Easy! Try fall favorites on the grill.
I just finished a meal of grilled rosemary turkey cutlets and grilled butternut squash.
For the squash, I cleaned and quartered it, making sure to season well with salt and pepper. Before placing on the grill I made sure it had a large dose of olive oil and wrapped the whole thing in tinfoil. Then, I let the steam go to work. I made sure to start the squash before the cutlets. Time management is important - even in grilling.
Dinner was a hit. But the leftovers were definitely the talk of the town. I made great paninis with a squash and red pepper relish.
