Does anyone have a good recipe for candied carrots?

My son is requesting them for his birthday dinner and I've yet to find a recipe that I really like.

Any suggestions?

1 bunch of carrots peeled

1/4 cup olive oil

salt and pepper

1/2 stick unsalted butter

1 orange juiced

1 tbsp brown sugar

1 tsp ground cumin

oven 350

put the carrots in a baking pan, sprinkle with olive oil, salt and pepper and bake for 3o min or until fork tender

while carrots are cooking, , put the butter in a pan, melt it and cook it until it starts to get a light brown...add the orange juice, the brown sugar and the cumin and continue to cook until it becomes syrup.

when carrots are done, take them out and pour the syrup over them and eat!

All I do is take canned carrots, cook them until the liquid is almost gone, add a blob of butter and a tbsp of brown sugar.  My mom used to add a bit of maple syrup, too... but I don't like the maple favor on my carrots.
