 Does anyone have a good recipe for crockpot mac n cheese?

This was our favorite!  It's baked, but it can easily be converted to a crockpot...complete all the steps except pour into the crockpot, cover and cook for 2 to 3 hours.

Baked Macaroni & Cheese

  • 16 oz. box elbow macaroni
  • 1/4 c. margarine or butter
  • 2 cloves garlic, minced
  • 1 tsp. onion powder
  • 1 tsp. ground mustard
  • 1/4 tsp. cayenne pepper (this does not make it hot, it adds zest!)
  • 3 Tbsp. flour
  • 3 c. half and half or milk or 50/50 of each (I use 2 cans of evaporated milk for this)
  • 1 1/2 c. shredded sharp cheddar cheese
  • 1 lb. Velveeta, cut into small cubes
  • salt & pepper to taste
  • 1/2 grated parmesan cheese

Preheat oven to 350°F. Grease a 2 quart or larger casserole dish. Cook the pasta in a pot of boiling salted water until al dente (do not overcook the pasta), about 7 minutes. Drain but do not rinse. Place in a bowl and add another 2 Tbsp. butter to prevent sticking, set aside.
Melt 1/4 c. butter in a large saucepan over medium heat. Add in minced garlic, onion powder, mustard powder and cayenne pepper; stir with a wooden spoon for about 3 - 4 minutes. Add in flour and stir for 1 minute. Slow add milk and cook, stirring constantly over medium heat until bubbly and thickened. Reduce heat and add in cheddar and Velveeta cheeses; mix until melted and smooth. Season with salt and pepper to taste. Add the cooked pasta and toss to combine. Transfer to casserole dish. Sprinkle with parmesan cheese. Bake at 350°F for 20 to 25 minutes.

Trisha's Crock pot Macaroni & Cheese

8 - ounces elbow macaroni, cooked
1- 12 ounce can evaporated milk
1 1/2 - cups whole milk
2 - large eggs, beaten
1/4 - cup (1/2 stick) butter, melted
1 - teaspoon salt
Dash of pepper
2 - 10-ounce bricks sharp Cheddar cheese, grated (about 5 cups)
Dash of paprika

In a larger 4 quart crock pot sprayed with cooking spray, mix the macaroni, milk, eggs, butter, salt, pepper, and all but 1/2 cup of the grated cheese. Sprinkle the reserved cheese on top of the mixture and then sprinkle with paprika. Cook on low for 3 hours and 15 minutes. Turn off the crock pot, stir the mixture and serve.


Note: If you don't have a crock pot , grease a 9 x 13 inch pan with butter, add the mixture and bake at 350 degrees for 50 minutes.

My crock pot gets pretty hot, so check your macaroni and cheese after about 2 hours. Mine took a little over 2 hours to cook.

Recipe yields: 12 servings

 I am going to make this tomorrow. Thanks!!! I actually have all of this at home except for the blocks of cheese!! It looks easy enough =)

 I've never made it in the slow cooker but it sounds good to me!

Slow Cooker Macaroni and Cheese I RecipeIngredients

  • 1/2 pound elbow macaroni
  • 4 cups shredded Cheddar cheese, divided
  • 1 (12 fluid ounce) can evaporated milk
  • 1 1/2 cups milk
  • 2 eggs
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Directions

  1. Coat the inside of the slow cooker with cooking spray.
  2. In a large bowl, beat eggs with fresh and evaporated milks. Mix in uncooked macaroni and 3 cups shredded cheese. Transfer to slow cooker, and sprinkle remaining cheese on top.
  3. Cook on low for 5 to 6 hours. Do not stir or remove lid while cooking.

 

Slow Cooker Macaroni and Cheese II RecipeIngredients

  • 2 cups evaporated milk
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1 egg, beaten
  • 2 tablespoons butter
  • 3 1/2 cups cubed Cheddar cheese
  • 1 (8 ounce) package macaroni

Directions

  1. Combine in slow cooker: evaporated milk, paprika, salt, egg, butter and cheese; stir. Cook on high for 1 hour.
  2. Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
  3. Stir cooked macaroni into cheese sauce, reduce temperature to low and cook for 3 to 5 hours.

Directions:

    Boil the macaroni in water for six minutes. Drain.

    In a medium saucepan, mix butter and cheese. Stir until the cheese melts.

    In slow cooker, combine cheese mixture and add the eggs (I omitted the eggs), sour cream, soup, salt, milk, mustard and pepper. Add the drained macaroni and stir again.

I have not made it in the crock pot but Think im going to try the recipe someone posted on here.
